My Staple Breakfast, Veggie/Egg Scramble

I went to a Boot Camp class tonight with my sister up in Bountiful.  It was so much fun and I’m so glad I got to go since I missed my fav Boot Camp class yesterday. 🙁  I think I worked killed every muscle in my body.  I’m a little nervous since I’m planning to go to my other favorite Muscle Works class tomorrow morning.  Eeeeee.  We’ll see how it goes.

Oh, I also must say that I WAS NOT in the mood to go to the gym tonight!  I was very very tired and worn out….but I went anyway!  Yay!  That seems to be the story of my life.  It is very hard to run/exercise/get to the gym, etc., but I’m always SO GLAD when I do!  I love it!

Well, I thought I would post one of my favorite simple, quick, easy, healthy staple breakfasts.  I had it this morning and I love it.  The only bad thing is that it doesn’t fill me up for very long….maybe a couple hours.  But, it is super low-cal and wicked healthy.

Veggie/Egg Scramble

  • 1 whole egg
  • 3 egg whites
  • Black Pepper
  • Mrs. Dash Seasoning (or Seasoning Salt)
  • ~1/2 Tablespoon Skim Milk
  • Veggies of your choice (I love bell pepper, onion, broccoli, green beans, spinach, zucchini, tomatoes, etc.)
  • Olive Oil Spray
  • Fruit

Crack egg/whites in bowl

Add black pepper and Mrs. Dash (or seasoning salt)

Add skim milk

Mix well with a fork or wire whisk

Prepare all veggies (slice, chop, etc.)

I use my little chopper ($10 at TJ Maxx) all the time! It’s very slick. Perfect for peppers and onions.

TIP:  I usually chop up a bunch of peppers and onions and then put whatever I don’t use in a container in the fridge.  It makes it even easier to make the next morning because I don’t need to chop them!

This is the spinach and green beans I use. Both from Costco. I love them!

Green-Beans-and-Spinach

Spray a pan with Olive Oil spray. 

Saute all the veggies until tender (I usually just saute them until the spinach has wilted.)

Sauteed-Veggies

Add the egg/egg white mixture to the veggies

Scramble everything together and cook until done!

Scrambled-Egg-Whites-with-Veggies

Top with Salsa and serve with a side of fruit.  Yum!

All about 200 calories or less. Awesome.
