Well I’m sorry to say I’ve had a nasty little cold the past couple of days. My sweet little 2 year old shared it with me. 😉 It’s the sore throat, achy, tired, “blah feeling” kind of cold. I’m ready for it to go away now.
BUT on a brighter note, I have a wonderful recipe to share with you all today! It’s for Hawaiian Haystacks and it’s one of my favorite dinner recipes EVER!
It’s a little bit of a pain to make, but it’s not hard. It involves a lot of ingredients, so I usually need to plan and go to the store beforehand. I love it though and it’s so yummy, healthy and chock full of veggies!
You may have heard of Hawaiian Haystacks before, or you may have your own version….but here’s mine;
Hawaiian Haystacks
This recipe is basically just rice (I make brown rice or quinoa) topped with a yummy chicken gravy and then topped with various veggies and other toppings.
I make my gravy a couple of different ways. I will share both versions with you…
Gravy Version #1: Roast a large chicken in the oven. Let it cool until it can be handled and then take the meat off the bones. Make a gravy with the juices from the chicken (click here for a great, easy recipe). You can mix the chunks of chicken into the gravy or add them to your haystack separately.
Gravy Version #2: In a large saucepan, mix 2 cans cream of chicken soup (I use my cream of chicken soup substitute recipe) with 2/3 cup milk (I sometimes sub almond milk) and 1 cup low-sodium chicken broth. Stir and bring to a low boil. Add in chicken (you can use rotisserie, canned or any kind of cooked chicken you like!) and mix well.
Make brown rice or quinoa….
Chop up all your toppings! You can add or omit whatever you like! Here are the toppings we use…
- Chow Mein noodles (I don’t use these, but my kids love them!)
- Bell Peppers; chopped
- Green onions; chopped
- Celery; chopped
- Tomatoes; chopped
- Olives; sliced
- Pineapple tidbits
- Slivered Almonds
- Cheese; grated
- Shredded coconut (I use unsweetened)
And here is how you assemble your haystack…
- Put Chow Mein noodles on your plate first.
- Top with rice/quinoa.
- Top with gravy.
- Then put the remainder of the toppings on your haystack in any order! We also like to top it all with a little soy sauce too. SO YUMMY!
My kids aren’t huge fans of all the veggies, but they like that they can make their haystacks however they want!
