Our Trip to Arches National Park + My New Healthy Eating Plan and Exercise Schedule

February 17, 201520 Comments

We just got back from a wonderful weekend spent at Arches National Park in Moab, Utah! We had a FANTASTIC time!  I was a little worried about traveling and hiking with all the kids, including the baby, but they seriously did so great. First off, I have to say that we have had the BEST winter ever here in Utah.  I have loved it so much!  We’ve had very little snow in the valley (where we live), but plenty of snow in the mountains.  We haven’t had a major snow storm since Christmas Day!  Crazy, huh?  We’ve had so many Continue Reading…

Crazy Life, a Fun Birthday + Getting Back to Work!

February 10, 201517 Comments

Hey everyone!  I hope you are all doing well. My life has been so insane the past few weeks and it’s getting very old!  The best word to describe me right now would be weary. My typical day-to-day life is pretty darn hectic, so it doesn’t take much to put me over the edge.  The past few weeks I’ve had too many things on my plate and not enough time to get ’em done.  Kev (a.k.a. my sanity) was also out of town for a few nights and my sweet baby was sick for several days. It’s been rough. I Continue Reading…

I’m done with Whole 30 and I’m Tired!

February 4, 201530 Comments

Oh my word guys, I have had a crazy, exhausting past couple of days! My poor, sweet baby has been sick and hasn’t slept well in FOUR NIGHTS!  In fact, he cried all night long last night.  I think I slept an hour uninterrupted once and maybe 10-15 minutes at a time the rest of the night.  He cried for 3 hours straight from 2-5.  It was torture for both of us and I felt so bad for him!  I took him to the doc today and he has an ear infection and a very sore throat. I’m happy he’s Continue Reading…

Thoughts about Healthy Eating + My Egg Creation Recipe

January 30, 201530 Comments

Happy Friday everyone!  I hope you all have something fun planned for the weekend.  I love weekends and am so grateful they come once a week. 😉 I’m hoping for a little R&R this weekend because life has been insane lately!  We’ve had so much going on and I can’t keep up!  It’s seriously been borderline “pull my hair out, put me in the funny farm and lock me up in an institution” kind of crazy. Ya. In fact, I kind of resemble Jack Nicholson a bit these days… Pretty much sums it up!  Except his hair is better than Continue Reading…

Day 20 of Whole 30, Sprout’s Farmers Market + New Saucony Kinvara 5 Shoes!

January 24, 201529 Comments

Well folks, I’m almost done with day #20 of Whole 30! It’s still hard and takes commitment, but it’s almost becoming second nature to me. I’ve definitely found some foods/recipes that I enjoy and it’s made it a lot simpler.  I know there are a million different “gourmet” Whole 30 recipes out there, but I’ve chosen to keep it very simple.  I pretty much eat a lot of the same things most days.  Yes, it’s getting old, but the simplicity actually helps me. Here are the basic things I eat; veggie/egg creations, sweet potato chips with guacamole, green smoothies with Continue Reading…

Healthy Eating, Exercising and LOSING weight on Whole 30!

January 20, 201525 Comments

Hello everyone!  Yes, I’m still alive. Ya know, I get asked all the time, “How do you find time to exercise regularly, eat a healthy diet, take care of 6 kids and a husband AND blog about it all?” My answer is always, “It….Is…..NOT….easy!” But, I love it! However, when my blog isn’t updated for a while, it’s probably because I’m busy exercising, preparing healthy meals, spending time with my family and/or occasionally sleeping. There are not enough hours in my day….seriously. I also must say that preparing meals/snacks for Whole 30 takes quite a bit of extra time.  I’ve Continue Reading…
