The 4th of July is tomorrow! Yay! I really love the 4th. To me, it’s the epitome of summer; barbeques, warm weather, good friends and family, staying out late and laying on the grass watching fireworks. It doesn’t get much better than that. I also decided that I want to make something yummy, healthy and CUTE for the fourth of July tomorrow. It has to be cute, right? Here are some fun ideas I came across today…. Flag Cake! Source I’m sure you’ve all seen versions of this cake before, but it’s a classic! And, you can make it relatively Continue Reading…
Healthy Sweet Potato Chocolate Chip Cookies
Well, I officially signed Kev and I up for the 4th of July 10k. Eeeee. I almost wussed out and just signed us up for the 5k, but I really wanted to do the 10k. I’m really nervous about it though. Yes, I know it’s only a 10k, but I am a big giant wuss of a runner right now. This will be my 4th official 10k and I’ve run 6.2+ miles a bunch of other times, but I’m kind of freaking out ’bout this one. I haven’t run more than 5 miles in a very long time. In fact, Continue Reading…
My Crazy Life and a Decision
Last week was the craziest week ever. Seriously. We were so busy and stayed up late pretty much every night. It was quite insane. I’m glad it’s over now. Phew. However, now that my pace and stress level have slowed down a bit, I feel like I’m in a weird little funk. I think my body is just plain exhausted mentally, physically and emotionally, and it’s making me feel a little “weird” and “funky.” I’m still happy though. 😉 I started off my morning with some yummy Pumpkin Protein Pancakes. I also had a cute “breakfast buddy” who enjoyed some Continue Reading…
A Fun Day at the Track with the Kids!
Kev and I have been gone the past few days helping with a Youth Conference (ages 14-18) for our church. It was absolutely amazing, but I can’t tell you how tired I am! Man. We camped at a beautiful place near Park City, Utah and I loved everything about the conference except the whole “camping” part of it all, lol. One night we heard from an AMAZING motivational speaker named Mike Schlappi. He talked about how when he was 15 years old he was accidentally shot in the chest by one of his best friends. That accident made him paralyzed Continue Reading…
A Fun 5k and Yummy Food
I ran a very fun 5k this morning with Kev and my friend, Amy. It was sponsored by the local hospital and I loved it! It was called a “Family 5k”, so there were a bunch of kids (some of them on bikes) and even a few dogs. It was great. I ate a yummy chocolate protein pancake before we left for the race… I just pulled it out of the freezer, popped it in the toaster and topped it with peanut butter, berries and a little sugar-free syrup. Yum! Here we are getting ready to head out to the Continue Reading…
Fun Stuff with the Kids and Laughing Cow Cheese
Hey y’all! We’ve had a lot of fun the past couple of days. I took the kids to see a movie yesterday morning. A lot of the local theaters do “Summer Movies for Kids” where they show a different movie each week and only charge $1.00-$2.00 per person. Love it! The movies are not new ones, but they are good ones! I took the kids to see “Horton Hears a Who” yesterday and they loved it. AND, it was new to my two littlest kids since they had never seen it. 😉 I bought some popcorn and a drink for Continue Reading…
