I was on The Daily Dish and Good Things Utah!

December 18, 201214 Comments

As y’all know, I was on The Daily Dish and Good Things Utah yesterday!  It was such a great, albeit nerve wracking experience for me! I stayed up late the night before making sure I had everything ready.  I had a million and one things to bring with me and I was so afraid I would forget something important. I also hardly slept the night before.  I think I woke up every hour!  It reminded me of the night before I was induced to have two of my children.  Yes, I felt like I was going to give birth.  It Continue Reading…

Yummy Pumpkin Protein Pancakes

December 13, 201210 Comments

I love protein pancakes SO MUCH!  They are so yummy, filling, healthy and just plain good.  I had some leftover pumpkin in my fridge so I decided to try my hand at Pumpkin Protein Pancakes! I’m happy to say that after three tries (third time’s the charm!), they turned out awesome! Here’s my chicken scratch recipe…. I love pumpkin things so much, but I especially love them when the weather is chilly.  There’s just something about pumpkin that is…..warm, comforting and cozy. Pumpkin Protein Pancakes (makes 6 pancakes) 1/2 cup pumpkin 3 egg whites 2-4 Tablespoons unsweetened almond milk (or Continue Reading…

A Yummy Crock Pot Chicken Recipe

December 7, 2012Leave a Comment

I told y’all I had an awesome chicken recipe to share.  It’s easy, yummy, creamy, “comfort foody” AND healthy!  What’s not to love?!  Oh, and it’s a Crock-Pot recipe too….score! Several years ago a friend of mine gave me a recipe for “Fall Apart Chicken.”  I’ve always loved the recipe, but I put it on my “do not cook” list when I banned all my recipes with Cream of Whatever soup in them.  🙂  So, the other day I decided to go on a crusade to healthify it!  It turned out awesome and tastes every bit as good as the Continue Reading…

Healthy Cream of Chicken Soup Substitute Recipe

December 6, 20122 Comments

I’ve decided recipes that include Cream of Chicken (or mushroom, or whatever!) soup are yummy, creamy, “comforty” and just plain good. HOWEVER, when I open up a can of Cream of Whatever soup and look at the unnatural colored gelatinous blob, I’m quickly reminded that it is anything but healthy! For a long time, I just used Campbell’s Healthy Request.  It is slightly better, but still very fake and full of obscure ingredients.  I eventually stopped using that and have since pretty much nixed all my “cream of whatever” soup recipes.  I just don’t make them any more. 🙁  I Continue Reading…

Sleep + Raspberry Almond Protein Shake

December 3, 20122 Comments

I have not been a very good sleeper the past couple of weeks!  AND, I must say sleep deprivation kills my “health motivation” quicker than anything else!  When I’m tired, I don’t feel like exercising and I’m not as judicious about the food I eat!  Dang it! Science has actually proven that lack of sleep=weight gain. I am a believer. When we are tired, two key hormones, Ghrelin and Leptin get out of whack.  Ghrelin is the hormone that stimulates our appetite and tells us we are hungry.  Leptin is the hormone that tells us when we are full. When Continue Reading…
