Well, we’ve had a crazy past few days!! On Thursday we took the kids down to St. George, Utah (about 300 miles south of Salt Lake City) for a fun little family trip! The main reason we went down there was for the St. George Marathon, which Kev was supposed to run with his brother. Unfortunately, he’s been suffering from multiple running injuries (IT Band AND Achilles….yikes!), so he wasn’t able to run. Poor guy. A Beautiful Hike + Yummy Apple Dip!
We decided to take the kids on a little hike yesterday. I love to take the kids hiking (exercise in disguise!) and enjoy the beautiful outdoors. I also wanted to enjoy the fall foliage before it was too late. 😉 We decided to go up to Bell Canyon, which is just south of Little Cottonwood Canyon in Sandy, Utah. I love these little “e card” dealy things. I laughed and laughed when I saw this one! Too funny. LOL! However, I really do believe we ultimately are what we eat! Sad, but true. Our bodies are constantly making new cells….and those cells are made from the things we put into our bodies! I have to laugh at some of the food combinations I’ve been coming up with lately! It all started last week when I realized I had a TON of food in my freezer that needed to be used. BTW, I LOVE to purposely make extra of almost everything I make so I can FREEZE the leftovers! It really, really makes it so much easier to eat well.
