Pluggin’ Along with the Healthy Lifestyle…

I’ve really been loving the “healthy lifestyle” plan I’ve been doing this month.   I’ve done really well for the most part, but I’ve definitely had a few bad days.

However, I haven’t had any fried foods and I’ve done pretty well on my sugar consumption.  That’s a huge plus for me!  BUT, I did have a very crappy day yesterday.  Dang.

My daughter keeps asking if she can make a treat, but I keep talking her out of it.  But yesterday she really wanted to make something.  Sooooo, she made yellow cupcakes with chocolate chips in them with chocolate frosting on top!!!!!

Dang.  I’m sorry I didn’t take a picture, but they didn’t last long.  AND, I had 3-4 of them!  YES, I’m a pig and I totally caved.

They were dang good though and I felt sick the rest of the day.  I dare say they MAY have been worth it though, lol!

BUT, that’s been my only “mega fall off the wagon” moment the past month.  I’m also supposed to have my “free weekend” this weekend, but I think I’ll scale it down a bit.

I think I’ll allow myself one treat and one cheat meal.  We’re going to be spending the weekend with Kev’s family though, so it will be tough.  I will be strong though!!!!

Healthy Dinners and Leftovers

I want to share a bunch of the healthy dinners we’ve been enjoying lately.  I love it when I PLAN ahead, make healthy dinners and have the leftovers for lunch.  It really helps to make healthy eating a breeze (or at least a sorta, kinda slight breeze!)

Here are a few things we’ve been enjoying…

I actually made FISH for dinner last week!!!  I’m not a fish lover, but this was pretty dang good!

Basil Pesto Tilapia

I bought it at Costco and most of my kids enjoyed it!  The ingredients and nutrition facts are pretty stellar too!  I served it with some roasted asparagus, brown rice and fruit.

It was really, really good!  I also picked up a loaf of french bread for the kids so they wouldn’t complain too much.  I didn’t know what they’d think about fish and asparagus for dinner, but they hardly complained and were very happy to have the bread too.

I also enjoyed the leftovers for lunch the next day…

Ya, I know that’s a ton of asparagus, but I managed somehow. 😉

I made grilled chicken, broccoli, peas, pineapple and leftover brown rice another night too.  The kids passed on the brown rice, but loved everything else!

I enjoyed the leftovers several times too…

I also loved throwing some romaine lettuce and Tzatziki in the mix too.  YUM!

I made tacos for dinner recently too.  They’re always a hit ’round here.  We cooked up some corn tortillas…

And just let everyone make their own however they wanted to…

I threw together some guacamole and cut up some fruit too.  Oh, and I always use lean ground turkey instead of beef.

I made mine into a heavenly taco salad with a side of fruit…

Yum.  I’ve decided avocado/guacamole makes everything taste amazing.  I love it so much!

We made Hawaiian Haystacks for dinner on Monday night and it’s one of my favorite meals ever.  We served it on top of quinoa this time (I made regular rice for the kids though….they’re not quinoa fans.)

In fact, we had the leftovers for dinner tonight, but I didn’t take a pic.

I also made breakfast for dinner last week.  I cooked up omelets for Kev and I (actually I let Kev cook them up cuz he’s a pro.)

I made turkey bacon and scrambled eggs for the kiddos.  Easy peasy and everyone was happy. 😉

A Decent Exercise Week So Far

I’m also happy to say I’ve had a decent exercise week so far too.   Woo hoo.  I’ve really been trying to exercise 5-6 days a week if I can.  There are definitely days it just doesn’t happen, but I still TRY to make it happen as often as I can.  Right now, I’ve been alternating between cardio one day and weight training the next.

My cardio mostly consists of going on walks with the kids right now.  It’s been just perfect.

On Monday, I went on a walk with the kids to the gas station (2 miles round trip) and bought everyone a drink.  My ten year old rode his bike and the dog wanted to come as well (you can see his shadow, lol.)

I went to the gym last night with my friend and got a great strength training workout in.  I also went to the gym for a bit tonight and hopped on the elliptical.

I’ve decided the elliptical is THEE perfect exercise for a pregnant lady.  I felt great and was really able to get a good workout in.  I’m going to try to do it once a week from now on.

I even snapped a quick pic on my way into and out of the gym tonight…

Yes, my poor little tank top needs to be retired.  It’s not a maternity one, so I’m really starting to fill it out and it’s becoming shorter and shorter.  Oh, and my jacket looks more like a shrug now.

Well, that’s all for now guys.  I’ve been SO TIRED today, so I’m going to head to bed.  I hope you all have a fabulous night!!!!

    You look so adorable! Good for you for still sticking with your healthy eating plan and exercising. I agree with you on avocado/guacamole making everything better. Seriously, I put it on chips, chili, bread, etc. It is just SO good. Those cupcakes sound really heavenly too. I don’t blame you, I easily would have eaten 4 myself…cupcakes are like a drug to me, haha!

      I love avocados so so much! They make everything so much better. The cupcakes were seriously amazing as well. YUM!

    Oh, you’re eating so healthy and even training during the pregnancy! It must take a lot of willpower.. You’re doing a great work, you should be proud of yourself!

    I should be getting out jogging now as well, but instead of this I’ve decided to bake a plum cake 🙂 And hopefully do some training afterwards. But I haven’t eaten a plum cake for so long time and now yesterday I found out they have bought a lot of fresh plums to my local store. I just had to buy these!

    Anyway, some treats should be allowed to everyone, especially if they are made by your own daughter 🙂

      Thanks so much! Wow, a plum cake sounds heavenly! I wouldn’t even know where to begin to make one of those. I love treats so much, but it’s dangerous that my daughter is becoming such a great baker!

    I have a tough time getting my kids to eat enough veggies, and I notice you often serve sliced fruit as a dinner side dish. That is such a good idea to get some vitamins in picky kids! I have copied you on that, so now if one of the kids refuses vegetables, I give him/her the choice of extra fruit instead.Thanks for the healthy inspiration, Mel!

    I totally have one of those “eat all the cupcakes or cookies” moments from time to time. They are they worst after I’ve been away from sugar for a while, so I totally get it! HA!

      I guess if we’re gonna have one of those “moments,” it’s best to do it with cupcakes or cookies though, right? Ha!

    The tilapia looks very good and yes, what a bonus that there are not many additives. We all cave into our cravings from time to time. I can imagine it being extra challenging when you’re pregnant not to crave things. Have fun with Kev’s family this weekend and happy Memorial Day.

      Yes, it’s SO SO tough to try to eat well while feeling so tired, sluggish and blah all the time. Dang it. We had a wonderful weekend though!

    Looks like a great week of eating – the haystacks sound good and simple – going to have to try those. I love tilapia – we tend to eat way more fish in the warmer months!!!

    Yum! I’ve tried that basil pesto tilapia from Costco before and really like it!

    That’s awesome that you worked out on the elliptical! It’s great that you’re motivated to stick to a workout plan during your pregnancy. What an inspiration!

    You and your daughter need to make my healthy coconut cookies!!!!!!!! Coconut Flour, Stevia, Coconut Oil, Flaxseed Meal & Vanilla!!!! SO GOOD 🙂
