I told you guys about these recipes the other day, but I haven’t had a chance to share them yet….so now I am. 😉
Both of these recipes are super yummy and will definitely be keepers at our house! The Quinoa Burgers are a fantastic way to use up leftover quinoa and the Sweet Potato Chips can be paired with just about anything.
They are both pretty slick to throw together too. Yay.
Quinoa Burgers
One of my readers actually shared this recipe with me and I’m so glad she did. Thanks Bobbie Jo! It’s from EatingWellLivingThin.Wordpress.com and it is a fantastic recipe!

I put cooked quinoa, shredded cheddar cheese, low-fat cottage cheese, grated carrot, eggs, flour, chopped green onions, sugar, black pepper, cumin, salt and garlic powder in a big ‘ol bowl…
I mixed everything together very well…
I sprayed a frying pan with cooking oil and heated it over medium-low heat.
I put the mixture on the pan using a 1/4 cup measuring cup and then flattened it down a bit…
I cooked them for about 4-5 minutes and then flipped them on the other side…
I cooked them on the other side for about 4-5 minutes or until they were crispy. That’s it! You can enjoy them on a bun or all by themselves!
I would have loved to have had this topped with tzatziki, but I didn’t have any. I topped it with a little bit of low-sugar ketchup and mustard and it was so yummy!
My kids even liked these! They said they “weren’t bad”, so that’s a “like” in my book!
I got 12 burgers from this recipe, but my burgers were pretty small. Here are the nutritional facts for one burger:
Sweet Potato Chips
These are really quick and easy to make….and so yummy!
I just used one sweet potato and it made a BUNCH!
Preheat oven to 425 degrees.
Wash and scrub sweet potato.
Cut off the ends of a sweet potato and slice the rest into thin slices. I used a food processor to slice the sweet potato and it made it super easy!
Line a baking sheet with crumpled foil and then spray the foil with cooking spray.
Lay out the sweet potato slices on the baking sheet. Try not to overlap them if you can.
Note: I made some sweet potato chips and some chips out of regular potatoes because the kids aren’t huge fans of sweet potatoes (I don’t know why!?!?)
I’m sad to say that the regular potato chips were a little gross. BUT, the sweet potato chips were SO good!
Spray the potatoes with olive oil spray (I used my Misto sprayer that I LOVE!) and then sprinkle lightly with seasoned salt, regular salt or any kind of spices you like!
Bake for 15-30 minutes (depending on your oven and preferences) or until lightly browned and crispy!

The nutritional facts are a little hard to determine because it depends on the size of sweet potato used. I calculated this using one large sweet potato, 20 sprays of olive oil and 1/4 tsp. seasoned salt. That is a HUGE serving, so you can adjust your nutritional information based on how much you end up eating!

Oh my heavens– those quinoa burgers look amaaaazing! I’m not a big sweet-potato fan, but then again I’ve never tried them thinly sliced. My older sister got my a Misto sprayer for christmas, I absolutely love it!

I think you would LOVE these sweet potato chips. They are so good! I really love quinoa too. It used to intimidate me, but then I bought some at Costco and just started making it. Now it’s become a staple in our home and I love it. 😉

Quinoa burgers and sweet potato chips…what more could you ask for? 😉 I can’t believe your kids don’t like sweet potatoes! Don’t give up. Studies have shown that it may take up to 15 attempts to change a child’s food preferences. One day they will be begging you for some orange, sweet goodness 😉

I don’t understand why they don’t love them either. I think they might be a little skeptical because I’ve made them try so many different things. I definitely will still make them because I LOVE them! I hope one day it will rub off on them, lol! That’s so interesting about the 15 attempts thing. Wow. We’ll just keep pluggin’ along…;-)

These burgers turned out better than I thought they would. They are really yummy! I was worried they would be hard to make and would stick to the pan or fall apart, but they worked out perfectly. I hope you love them!

Hi Janine, I always try to keep my protein intake high, but on the days I work out I might add more calories in general. I think a consistently healthy diet full of a balance of protein, carbs and fat (I do a 40%/35%/25% ratio right now) is ideal every day.
