Easy Cilantro Lime Brown Rice
- 1 1/2 cups brown rice
- 3 1/2 cups water
- 1 teaspoon chicken bouillon (I love Better Than Bouillon)
- juice of one lime
- 3 Tablespoons cilantro; chopped
- 3 teaspoons olive oil
- 1/2 teaspoon salt
Cook brown rice in rice cooker or on top of stove. To cook on top of stove, follow these instructions…
- Combine rice, water and chicken bouillon in saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low, cover and simmer until rice is tender and most of the liquid has been absorbed; about 40-50 minutes. Turn heat off, keep covered and let stand 5 minutes. Fluff with fork.
After rice is cooked, add juice of one lime, cilantro, olive oil and salt. Combine and serve.
