Easy Cilantro Lime Brown Rice

Easy Cilantro Lime Brown Rice

  • 1 1/2 cups brown rice
  • 3 1/2 cups water
  • 1 teaspoon chicken bouillon (I love Better Than Bouillon)
  • juice of one lime
  • 3 Tablespoons cilantro; chopped
  • 3 teaspoons olive oil
  • 1/2 teaspoon salt

Cook brown rice in rice cooker or on top of stove.  To cook on top of stove, follow these instructions…

  • Combine rice, water and chicken bouillon in saucepan and bring to a boil over medium-high heat.  Reduce heat to medium-low, cover and simmer until rice is tender and most of the liquid has been absorbed; about 40-50 minutes.  Turn heat off, keep covered and let stand 5 minutes.  Fluff with fork.

After rice is cooked, add juice of one lime, cilantro, olive oil and salt.  Combine and serve.
