(From the book, Metabolism Miracle)
- 1 head cauliflower, florets only
- 2 cloves garlic, finely chopped
- 1 (14-ounce) can chicken broth
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon butter
- 1/4 cup light sour cream
- 1/2 cup reduced-fat shredded Cheddar cheese
- Salt and pepper
In a medium saucepan over medium high heat, bring the cauliflower, garlic, broth, and salt to a boil.
Reduce the heat to medium and simmer until extremely tender.
Drain, reserving the broth.
Place the cauliflower in a blender with the pepper, butter, sour cream, and Cheddar.
Puree, adding broth as needed for a mashed potato consistency.
Salt and pepper to taste.
Serve warm as you would mashed potatoes.
