This is one of my favorite breakfasts ever! It really reminds me of a yummy, warm, gooey chocolate chip cookie!
- 1/2 cup old fashioned oatmeal
- 1 cup water
- 1/2 scoop vanilla protein powder
- 1 tablespoon stevia
- 2 tablespoons PB2 (optional)
- 1/2 teaspoon vanilla extract
- 1 tablespoon dark chocolate chips
Mix oatmeal and water in microwave safe bowl. Microwave for 2 minutes.
K, here is the only annoying thing about this oatmeal….you have to let it cool before you add the other ingredients. If you don’t let it cool, your chocolate chips will just melt and turn the oatmeal into chocolate oatmeal! So lame.
I like to put the cooked oatmeal in the freezer for about 10-15 minutes and it works out perfectly.
Soooo after it’s cool, add the rest of the ingredients except for the chocolate chips. Note: make sure you mix the PB2 with water (2 T. PB2 + 1 T. water) before you add it to your oatmeal.
After everything is mixed together well, add your chocolate chips and gently mix them in (you don’t want them to melt too much!)

Note: I love this oatmeal with the PB2, but I’ve discovered if I leave it out (45 calories saved), then I can add in a few more chocolate chips!! It tastes heavenly.
