Chocolate Protein Pancakes
(I like to double or triple this recipe and freeze a bunch for later!)
- 3 Egg Whites
- 1/3 cup Lite/Fat Free Cottage Cheese
- 1 1/2 tablespoons Unsweetened Almond Milk (or milk of your choice!)**
- 1/3 cup Oats (make it a heaping 1/3 cup)
- 1 tablespoon Ground Flaxseed
- 1 scoop Chocolate Protein Powder (~1/3 cup)
- 2 tablespoons Cocoa
- 1/2 teaspoon Baking Powder
**You may need to add more liquid depending on the kind of protein powder you use. If your batter is too thick, just add more liquid until the batter is pourable and the desired consistency is reached.**
Blend egg whites, cottage cheese and almond milk in the blender.
Add the remaining ingredients and mix well.
Note: I usually need to use my blender “push stick thingy” to help the batter to mix well.
Pour batter by heaping 1/4 C. onto heated griddle.
Cook for 1-2 minutes until set on one side. Flip and cook the other side until done!
Makes about 5 pancakes.

I love to top these with nut butter, fruit (berries and/or bananas) and a drizzle of sugar-free syrup. I prefer Log Cabin sugar-free maple syrup or Walden Farms caramel syrup. So good! I sometimes top it all with a dollop of whipped topping from the can too.
