This isn’t so much a recipe as it is a healthy idea or inspiration!
You can easily make French Toast “healthy” if you use good quality bread. If you are watching carbs and calories, I recommend Sara Lee’s Delightful bread.
I also love to use Ezekiel Bread or Dave’s Powerseed Bread. They are both extremely high quality breads that you can feel good about eating!
When I make French Toast, I just throw a bunch of eggs (I use 6 or 7, but I have a big family) into a shallow glass pan (a square Pyrex or glass pie dish works perfectly) and scramble them up with a fork. I also throw in little milk (a couple tablespoons) and a little bit of salt and then mix everything up well.
I heat up a griddle on my stove (you can use a frying pan too), dip a slice of bread in the egg mixture and then cook it on both sides until golden.
I love to top mine with fruit and a little sugar-free maple syrup. YUM! I also like to make scrambled eggs on the side and if I’m feeling ambitious, I’ll cook up some turkey bacon too. SO GOOD.
