Whenever I have leftover quinoa, I love to make a quinoa veggie scramble for breakfast! You can change up this recipe however you like, but here’s how I usually make mine…
- 2 tablespoons onion; chopped
- 2 tablespoons bell pepper; chopped
- small handful baby spinach
- 1/3 cup cooked quinoa
- 1 whole egg + 3 egg whites
(Optional ingredients: chopped turkey, ham, olives, mushrooms, feta cheese, etc.)
Spray a small pan with olive oil spray.
Add onions, peppers and spinach.
Cook until spinach wilts a little. Add quinoa…
Mix everything together…
Beat eggs in a separate bowl and season however you like (I love to use a little Mrs. Dash and black pepper.)
Add eggs to quinoa and veggies…
Scramble and cook until done!
Top with salsa, low-sugar ketchup, chopped tomatoes or whatever you like!
