I love roasted bell peppers! They are so rich and flavorful and make any sandwich or salad unbelievably tasty! You can buy roasted peppers in a jar at the store, but I much prefer to just make them myself.
They are not hard to make, but do take a little time. Believe me, THEY ARE WORTH IT!
1. Preheat oven to 500 degrees.
2. Wash your peppers. Cut the tops off and then cut them in half lengthwise. Remove the seeds and as much of the white membrane as possible. Place them on a baking sheet, cut side down. Then brush them lightly with olive oil.
3. Place peppers in oven and bake for 25-35 minutes. Check them periodically to see how they are coming along.
4. When they are nice and blackened, remove them from the oven.
5. Cover the peppers for about 15 minutes (this will allow the skins to come off easily.) You can put them in a bowl and cover them with plastic wrap or place them in a big Ziploc bag.
6. Remove the skins with your hands. They should slide off rather easily.
7. Slice them up and enjoy on a sandwich, salad or however you like! You can store them in the fridge for up to a week. Some people like to store them in oil, but I just keep them in a little container in the fridge as is. LOVE THESE THINGS!
