Roasted Red Potatoes

(makes a full 9×13 pan)

  • 3-4 pounds Red Potatoes; scrubbed and chopped into bite-sized pieces
  • 1/2 large Onion; chopped
  • 3/4 tsp minced garlic (about 1 1/2 cloves)
  • 1/4 C. Olive Oil
  • 1 tsp. Seasoned Salt

Chop potatoes and onions

Mix Olive Oil, Seasoning Salt and Garlic in a large Ziploc bag

Add potatoes and onion to Ziploc bag.

Seal bag and shake well to combine ingredients.

Pour into a 9×13 pan and cover tightly with foil.

Bake at 425 degrees for 45 minutes.

Remove foil and bake for 15 more minutes.

I then like to broil it for 5+ minutes more until it gets a little browned on top.

All done!  So so yummy.
