- 1- 1 1/2 lbs. ground turkey (or lean ground beef)
- Taco seasoning
- 1 can fat-free refried beans
- Lettuce (any kind); chopped
- Low-fat/fat-free sour cream or cottage cheese
- Tomatoes; chopped
- Salsa
- Cheese (optional)
Brown the ground turkey (or beef) in a saucepan over medium heat. Drain fat/liquid. Add taco seasoning/water (according to package directions). Simmer until water is absorbed.
Heat refried beans in microwave or on top of stove
Chop lettuce
Chop tomatoes
Shred cheese
Create taco salad with ingredients of your choice!
I love taco salad….yummy, easy, healthy…yay! My husband and kids LOVE tacos too! It’s so nice because nobody complains about dinner! I love them because they are so easy and I can make them healthier for me!
When we have tacos, the kids just eat them on regular tortillas and I either make a taco salad or use a lo-carb, high protein/fiber tortilla for me.
This time, I made it into a taco salad, obviously. I used iceberg lettuce, baby spinach, fat-free refried beans, ground turkey taco meat, a little cheese (I splurged), low-fat cottage cheese, and salsa. Yum!
