- 4 egg whites
- Black Pepper
- Mrs. Dash Seasoning (or Seasoning Salt)
- Veggies of your choice (I love bell pepper, onion, broccoli, green beans, spinach, zucchini, tomatoes, etc.)
- Olive Oil Spray
- Fruit
Put egg whites in bowl
Add black pepper and Mrs. Dash (or seasoning salt)
Mix well with a fork or wire whisk

Prepare all veggies (slice, chop, etc.)
I use my little chopper ($10 at TJ Maxx) all the time! It’s very slick. Perfect for peppers and onions.
TIP: I usually chop up a bunch of peppers and onions and keep whatever I don’t use in a container in the fridge. It makes it so easy next time I make it!
This is the spinach and green beans I use. Both from Costco. I love them!
Spray a pan with Olive Oil spray.
Saute all the veggies until tender (I usually just saute them until the spinach has wilted.)
Add the egg white mixture to the veggies.
Scramble everything together and cook until done!
The finished product!
Top with Salsa and serve with a side of fruit. Yum!
Voila!
All about 200 calories or less. Awesome.
