Well hello my friends!
Summer is officially here. Yay! The other day my six year old asked if we could have a “pic-mic” in the backyard. He’s the sweetest little boy on the planet, so we brought a blanket outside and had a picnic!
He even talked his 17 year old brother into joining us. Ha ha. We had a fun time and it felt like summer!

I went to a new class at the gym the other night. It was fun and it kicked my boo-tay!
It was a HIIT style class and it was a lot of fun. I love trying new classes and learning new things. 🙂

I went to Costco yesterday and Vital Proteins Collagen Peptides are on sale. Woot!
Right now a 24 oz container is $23.99. That same size container goes for about $45 on Amazon! Crazy.
Apparently, Collagen is good for your hair, skin, nails, bones, joints, ligaments and muscle recovery. It’s hard to tell if it’s really helping me in those areas, but I’d like to believe it is! If nothing else, it’s 20 grams of protein per serving, which is great.
Most people struggle to get enough protein in their diets, so collagen peptides is an easy way to get some in!
Here are a few more things I picked up at Costco recently….
I love picking up a rotisserie chicken. They are only $5 and they’re huge! I take all of the chicken off the bone and just put it in a container in the fridge. It’s a perfect easy and yummy protein snack. My 17 year old son and my husband and I are the ones who particularly enjoy it!
If we haven’t used it up after 4-5 days, I put it in a freezer bag and throw it in the freezer. It’s so nice to have on hand for soup, enchiladas and casserole recipes.
My kids love those little cans of Pringles, of course. They’re obviously not healthy, but it’s so nice to have an easy snack for the kids to grab. I enjoy healthy living, but I’m also a fan of easy, practical, yummy living as well. Ha ha. It’s tough to keep all of these kids fed and happy!
I also really love that riced cauliflower. It’s actually my new favorite thing to add to my protein shakes. I know, I’m weird. I love experimenting with my protein shakes and I’m always trying to see how many awesome things I can add to my shake and still keep it palatable. Ha.
Here are a few more things I picked up….
Um, I love Bark Thins! They are my favorite thing. When I’m craving a little somethin’ somethin’, they always fit the bill. They are super yummy, satisfying and a small piece or two is all I usually need.
I love to add those power greens, Josie’s Organics Spring mix (the best!), the cucumbers and tomatoes to my shakes as well. I also enjoy all of those things as a quick salad on occasion as well. They are all so yummy and fresh!
Oh and FYI, those power greens freeze really well. I keep a few bags in the freezer and then just put some in my shakes as I need some. It’s great! I haven’t tried freezing the spring mix, but maybe I should experiment with that???

I also thought I’d share a quick, yummy dinner I made the other night! It was for “Chicken Curry in a Hurry” from Mel’s Kitchen Cafe (I love her site and make a ton of her recipes!)
It was a really easy and healthy recipe and I really enjoyed it! My kids didn’t love love it, but at least they ate it! We all enjoyed the leftovers for a couple days too.
I cooked up some broccoli and some potstickers (from Costco) on the side. My kids LOVE those potstickers, so if I make them with a meal that they don’t particularly love, they usually don’t complain as much, lol.
I also just cooked up some jasmine rice in my rice cooker to go with it. Super yummy!
