My kiddos went back to school today after having several days off for Spring Break. It was so tough to drag everyone out of bed this morning, myself included!
However, I do enjoy having a more predicable and productive schedule.
I’m also REALLY enjoying my healthy diet….so much! I started yesterday and can already tell a difference. I feel less bloated and blah-like. It’s great. I’ve definitely been craving sugar, especially with all the Easter candy we have around our house, but I feel very stubborn and determined to succeed!
I have so many things to share with you guys about my diet plan….deep thoughts, meal ideas, success tips, food pics, etc., but I’m going talk about that tomorrow in a separate post, K?

I recently received a fun “Spring Break” package from Babybel cheese. My kids always get so excited when these packages come in the mail.
It included 4 different flavors of cheese; Original, White Cheddar, Light and Mozzarella. Yum! It also included some fun magnetic travel games, a travel activity book for the kids and a gift card to purchase some items to pair with the cheese.
So fun!
We went on some fun family excursions over Spring Break and the items in this package definitely came in handy. On Friday night, we took the family on a short hike which led to a fun park.
I grabbed these snacks as we ran out the door…
I love to pair Babybel cheese with popcorn and/or fruit, or in this case fruit leather. They taste great together and you get a good source of protein (6 grams in each cheese) and healthy carbs.
I also love that all of my kids LOVE these snacks. No complaining=a happy mom. 😉
The hike was beautiful and the weather was perfect.
We also had a lot of fun playing at the park. My littlest ones loved playing on the playground and all of us had fun racing. Kev raced several of the kids first…
Then I decided to “race” too. Loved it.
There’s just something about running across a big grassy field that is strangely, so much fun! Jimmer (the dog) had an absolute ball as well. He was in heaven!

On Saturday morning, we started the day off with a fun Easter Egg hunt put on by our city…
They split it up into age groups and I went with my cute 6 year old (he’s smack in the middle of that pic.)
After the Easter egg hunt, we decided to have a fun family day. We took the kidlets to Salt Lake City and first stopped at the BEST donut shop in the whole entire world!
Banbury Cross Donuts! Holy freak guys, I’m NOT kidding when I say these donuts are the very best ever. They are extremely dangerous.
They have so many yummy flavors. The raised donuts melt in your mouth and the cake donuts are so flippin’ good! We let the kids each pick out a donut and I picked out a Coconut cake donut for myself. Holy yum.
We also took some home, which was probably not a very good idea! I told Kev that we’ll probably be visiting this donut shop once a month (on my free weekend!) from now on. 😉
After stopping at the donut shop, we decided to burn some calories off on another hike! We hiked up Ensign Peak, which is a wonderful hike for families.
It’s only about a mile round-trip, but it’s a tough hike! It’s very steep at times and gets the heart pumping. 😉 I love it.
It also has some history behind it, which I love too. When the pioneers first arrived in the Salt Lake valley in 1847, the leaders climbed up this peak to survey and plan out the city they intended to build.
Pretty cool! It was a beautiful view, although it was kind of hazy. 🙁

When we finished our hike, we stopped for a bit to enjoy the picnic lunch I packed.
I just made a whole bunch of Peanut Butter and Jelly/Honey sandwiches and we had them along with some fruit leather, Babybel cheese, apples, grapes and Cheez-It crackers (not pictured.)
Everything tasted great. After the hike, we walked around Salt Lake City for a bit. We visited Temple Square and the Joseph Smith Memorial Building.
It was a really fun day!

On Sunday morning we went to church, and then afterward enjoyed some fun Easter things.
Ya, we’re a little unorthodox.
My littlest kiddos wanted to use their Halloween buckets as their Easter baskets and I wrapped their gifts (they each got a spring outfit) in Christmas paper. Awesome! Oh, and I didn’t feel like dealing with Easter grass this year, so that’s why there’s a grocery sack under my son’s basket….so the candy wouldn’t fall through the cracks!
Totally redneck. Can you tell I’m the mother of many??? Yes, I pretty much just go with the flow and do what works!
The kids didn’t care one bit and were just happy to get yummy candy and cute clothes.
Oh, and I didn’t quite know how to divide up the Peeps, so I just laid them out in a pile (pictured in front of the couch) and told the kids the Easter bunny said to “share!” LOL.
Later on, we went up to my parent’s house for Easter dinner and I totally didn’t take ANY pictures! Lame. However, I did snap ONE picture of my cute 6 year old because he lost his first tooth while we were up there.
He was beyond excited! I told him he needed to stop getting so darn big. Sigh.
Oh, and I also managed to take my baby bump picture as well. I’m now 23+ weeks along…
Well that’s all for now folks. It’s getting late and I need to hit the hay! I plan on hopping on here tomorrow to tell y’all all about my fun diet plan. Woo hoo.
