I’ve had a hectic day. Blah. But, the kids are out of school tomorrow! Yay!
Anyway, I made a yummy, light dinner the other night that I thought I would share. It’s not gourmet at all, but it is perfect on those crazy, busy nights.
If you’re a busy mom (or dad!), you’ll love the simplicity of this meal.
If you’re a busy (poor) college student, you’ll love the simplicity and budget friendly aspect of this meal.
It’s just open-faced cheese sandwiches, broccoli salad and pineapple! Yum!
This meal takes 5 seconds to throw together.
I just lay a bunch of slices of bread on a large cookie sheet, sprinkle them with a little garlic salt and parmesan cheese and then top each slice with a little cheddar cheese.
I bake them in the oven at 350 degrees for 10 minutes and then broil them for about 3-5 minutes until they are browned on top. That’s it.
Freaking awesome. I don’t even add any butter to the bread (you can if you want though.)
I used Ezekiel bread (love this stuff) for Kev and I (you can buy it in the freezer section of most grocery stores)…
I calculated this cheese bread creation to be about 125 calories per slice (the Ezekiel bread version.) I used this bread for my kids…
Granny’s Delight is a local company (sorry to those of you outside of Utah.) They use all natural, high quality ingredients and no preservatives. Each slice has 3 grams of fiber and 3 grams of protein. I buy this “sprouted wheat” variety at Costco, but this and all Granny’s Delight breads are available at most grocery stores as well.
I especially love the Granny’s Delight 100% Whole Wheat variety! It is the bomb!
It’s only 80 calories per slice and has 6 grams of fiber and 3 grams of protein. Booyah! Oh, and it tastes great too! My kids love it!! Freaking awesome. I love awesome companies!!
I also bought a fun little broccoli salad kit at Costco too.
Loved it, but I was sad the dressing wasn’t super healthy. I made this on a crazy night, or I would have just made my own dressing.
SO, I just threw all the ingredients together and then just used half the dressing. It tasted great.
We also bought a fresh pineapple at Costco as well. It went perfectly with this meal. All my kids ate everything and it was SOOOO simple to make! This is definitely a “crazy, busy, pull out your hair day” kind of dinner!

I changed into my gym clothes just before I sat down to write this post. I was so amazed by how well this bra fits under ALL my tanks!! It’s so comfy and flattering, and I LOVE the straps!! They are amazing!!
