We had a fun time with Kev’s family last weekend. I told you guys I was going to try to eat well, but unfortunately…I did not. Dang it. I have such a hard time eating well when I’m on vacation. I’m just grateful we were only gone for two days. AND, I went right back to healthy eating when we got home. Yay.
We headed out of town Friday evening. Friday also happened to be Chick Fil-A’s Cow Appreciation Day! If you follow me on Facebook, you saw that we attended Cow Appreciation Day this year! We went last year and had so much fun, so I really wanted to go again!
If you’re not familiar with Cow Appreciation Day, here’s the scoop. If you dress up like a cow, you get a free meal! If you just have a single cow accessory on, you get a free entree. Simple as that. Chick Fil-A also has cow costume stuff on their website that you can download and print off. Pretty slick.
Soooo, on our way out of town we stopped by Chick Fil-A to get free food!
It was pretty awesome. My 14 year old wasn’t too excited to dress up like a cow, but I told him he could either dress up and get yummy Chick Fil-A food or he could eat at home. He quickly got all “cowed up” and joined in on the fun.
He was also excited because Chick Fil-A gave him a 12 piece chicken nugget meal! So cool.
I got the new Grilled Market Salad and it was so good!
It has blueberries, strawberries, apples and blue cheese in there and it’s fantastic. It also comes with little packets of nuts and granola. I chose to have the reduced fat Berry Balsamic Vinaigrette dressing and everything tasted so good! I really only needed a drizzle of the dressing because there were so many yummy flavors in there already.
This has got to be one of my favorite fast food salads of all time. Super yum.
We took our Chick Fil-A food with us, picked up Kev from work and headed up to Idaho and Oregon to spend the weekend with Kev’s fam.
We had a wonderful weekend, but I ate way too much crap. I enjoyed some of Kev’s mom’s homemade pie (the best ever!), we went out for burgers and fries on Saturday and I had plenty of homemade treats on Sunday. Oh, I also snacked on some candy on the drive home. It was fun, but it’s amazing how SICK I feel when I don’t eat well. Blah.
We got home Sunday night and I was very anxious to get back to eating well.
Yesterday, I took all the kids to Costco with me so we could stock up on healthy stuff. Here are some of the yummy things I got…
Yum! I’ve told you guys before that I don’t usually buy bananas at Costco. I just don’t think they ripen very well. But, I didn’t feel like going to a different store, so I decided to give them another shot. We’ll see how it goes.
I went to my favorite Boot Camp class at the gym with Kev last night. When we got home, I decided to use all of the yummy produce I bought at Costco. I just cut up a bunch of things and made a little buffet out of it. I told the kids they could do whatever they wanted with it. I also pulled out some tortilla chips to make it a little more kid friendly.
Here’s the plate I made for my 3 year old. My 5 year old basically had the same thing too.
Nachos with chips, chicken, cheese and olives and some yummy fruit and carrots on the side.

My nine year old wasn’t too thrilled with this dinner. He decided to make himself a bowl of cereal and have some fruit on the side. He wouldn’t let me take his picture. 🙁 My oldest son wasn’t home so he didn’t eat with us.

I really loved this dinner! It was easy, healthy and yummy. And, now I have a lot of leftovers that I can snack on or make salads and wraps out of too. Hooray.
Well, I gotta run. My cute little sister from Connecticut is here visiting and I want to spend the evening with her! So fun! She comes out for a couple weeks every summer and we have such a great time!
