I’m sorry to report that I feel a little bit crappy today. 🙁
I told you guys I felt like I was coming down with a cold last weekend, right? Well, since then I’ve been running around like a crazy lady (pretty typical) and I’ve been slacking on my sleep a bit.
Consequently, I feel very, very blah now. It seems like whenever I get sleep deprived, I always get sick. You’d think one of these days I would learn, huh?
Anyway, I decided to skip my run yesterday, and now I’m debating if I should go to the gym tonight. So sad. I’m hoping to get a burst of energy in a bit and still get a quick workout in. We’ll see.
I AM planning on taking a long, hot bath tonight and heading to bed early though. Sounds heavenly.

I had a fun, busy day yesterday. I spent the afternoon cheering on a couple of my kids at the Elementary school Jogathon fundraiser. It was so cute. I first watched the Kindergarteners run and then the 4th graders.
They ran for 20 minutes straight and I was so happy (and surprised) that both my cute kiddos ran the whole time. I really didn’t know how long my five year old would last, but he did great!
Spider-man and I enjoyed cheering them on too!
My 5 year old ran about 1.7 miles and my 10 year old ran 2.6 miles. Awesome.

Later on, we went to the Pinewood Derby for my 10 year old’s Scout troop. I LOVE the Pinewood Derby! It’s just good old fashioned fun and reminds me of the “good ol’ days” when life was just a little bit simpler.
Sadly, his car didn’t do so well. 🙁 He did win a few heats, but he lost some too. He had a great time though!

Well, I have a really fun recipe to share with you guys today! It’s for Overnight Oats and they are fantastic!!
I’ve seen recipes for Overnight Oats kickin’ around the internet for a long time, but I never really wanted to try them. For some reason cold oatmeal soaked in yogurt overnight just didn’t sound appetizing. Ewww.
However, I eventually decided to try them and I’m happy to say that I LOVE them!
Kind of like Green Eggs and Ham. 😉
They are easy to make, super yummy, full of nutrition and very portable! What’s not to love??
Anyway, I made several different variations and they were all yummy!
Here’s the basic recipe….
Overnight Oats
- 1/3 cup oats
- 1/2 cup milk (I used unsweetened almond milk)
- 1/3 cup plain Greek yogurt
- 1/2 tablespoon chia seeds
- 1 glob honey (about 1/2 tablespoon)
Mix all ingredients in pint sized canning jar (or container of your choice!) Put the lid on and shake it up until all ingredients are combined. Store in fridge overnight (or up to 4 days) and enjoy!
Note: Glass canning jars are the perfect thing to make these in because they are the perfect size, they have a lid and they’re very portable. Also, if you use canning jars, you don’t even need to mix up the ingredients….you can just put the lid on and shake it up! However, you can make this recipe in any container you like!
Anyway, I decided to make five different kinds. So, I filled up five pint sized jars with the basic recipe ingredients and shook them up…
You can store them in your fridge just like this and then add different ingredients and flavors to them in the morning, or you can add all of the ingredients/flavors at once. It will work out either way.
Here are the variations I came up with…
- 3-4 strawberries; chopped
- a splash of vanilla extract
- 1/2 of a mango; chopped
- a splash of almond extract
- 1 tablespoon cocoa
- 1/3 of a banana; sliced
- 1 tablespoon peanut butter
- 1/2 of a peach; chopped
- a splash of vanilla extract
- 1/2 teaspoon cinnamon
- 1/3 of an apple; chopped
These should stay good in the refrigerator for 3-4 days, maybe longer.
I have to say that the chocolate, peanut butter banana one was my favorite (shocker, I know!), but I really enjoyed all of the other flavors too.
I also consulted my panel of judges to see which ones they liked the best…
My daughter liked the Strawberries and Cream one and my sons like the Apple Cinnamon one the best.
These are so yummy and you can get creative and add whatever you want to them! You can add all sorts of fruit, nut butters, flavors/extracts and even granola or cereal on top. Yum, yum, yum!
This is the perfect breakfast to grab on the go in the morning or to take to work and enjoy as a snack or lunch later on. LOVE IT!
