I’m done with Whole 30 and I’m Tired!

Oh my word guys, I have had a crazy, exhausting past couple of days!

My poor, sweet baby has been sick and hasn’t slept well in FOUR NIGHTS!  In fact, he cried all night long last night.  I think I slept an hour uninterrupted once and maybe 10-15 minutes at a time the rest of the night.  He cried for 3 hours straight from 2-5.  It was torture for both of us and I felt so bad for him!  I took him to the doc today and he has an ear infection and a very sore throat.

I’m happy he’s on some medication that will hopefully make him (and me!) feel better soon.

I’m also happy to say that I am DONE with the Whole 30!

I seriously can’t believe I completed Whole 30!  I’ve wanted to do it for SO LONG and it feels so good to say I actually did it!  It is a major accomplishment to me!  Oh, and I’m happy to report that when I hopped on the scale this morning, I’d lost almost 10 pounds; 9.6 pounds to be exact.

I can see a big difference in the way I look, all of my clothes fit me better and I feel lighter and leaner.  I love it.  I still have more weight I’d like to lose, but for now I’m happy about the progress.

I’m planning on doing a different post about my results, before/after pics, things I learned, etc., but for now I’ll just say I’m so glad I did it!  I learned so much and I’m sure I’ll do it again!  In fact, I think I’ll do it every January.  It’s the perfect way to start off the year and reset after the holidays.

Oh, and the fact that I did the Whole 30 while having a 4-5 month old baby was actually quite the accomplishment.  I did not sleep well most of the month, so I’m sure the next time I do Whole 30, it will be quite a bit easier.

It’s tough to stay motivated when I’m so………….dang…………..tired.

If any of you are thinking of doing The Whole 30, I would tell you to DO IT!  It’s only 30 days, it goes by pretty quickly and you will NOT regret it!

Well, I don’t have a lot of time and I have a billion and one pictures to share with you guys, so here goes nothin’…

On Saturday night, Kev and I went out on a date.  We went to Texas Roadhouse.  I only went out to eat four times during Whole 30 and I always ordered the most compliant thing on the menu.  This time, I ordered the 8 oz. sirloin with a plain sweet potato and veggies.  It was great!

It was also so nice to get away with Kev (and the baby!) for a bit.

BTW, baby’s been sucking on that one little finger quite a bit and I think it’s darling!  I probably should stop him so it doesn’t become a habit, but I don’t want to.  Hee hee.  I am loving his age right now!  I just want to chew on him all day long.

On Sunday night, we went up to my parent’s house for a casual Super Bowl party.  Kev, my brother and a few of my nephews are the only ones who really watch the game, the rest of us just enjoy the commercials, good food and good company!

In fact, if you follow me on Instagram, you probably saw that I was taking pictures instead of watching the game!

I was grateful my mom asked me to bring a veggie tray this time!  I also brought some guacamole (Wholly Guacamole with chopped tomatoes.) I pretty much just ate that and a little bit of deli meat.  I’m not sure if the deli meat was 100% clean, but I ate it anyway (desperate times…)

It was great and we had a fun night!

I’ve been eating a lot of other yummy things lately.  I made this spaghetti squash casserole last week and it was awesome!

I based it loosely off of this recipe and it turned out so good!  I really didn’t think it was going to be very good, I just made it because I was getting sick of eating the same ol’, same ol’ foods.  I thought it was going to be a little dry and bland, but it was moist and flavorful!  Kev loved it too!

I served it with a side of roasted broccoli and it was just perfect.

I’m planning on making it again soon and I’ll pay closer attention to how I make it so I can share it with you guys.

Oh, and I had the leftovers several times as well.  Leftovers are SO NICE to have during Whole 30.  It takes the guesswork out of meal time.  I also had sweet potato chips and guacamole on hand at all times!

I also made some roasted potatoes one night and they were amazing.  It was nice to have a little bit of comfort food.

Even though potatoes are allowed on Whole 30, I only made them 3 times.  I had them for leftovers a few times though.  I made mashed potatoes (with unsweetened coconut milk and no butter) twice and these roasted potatoes once.  I had sweet potatoes all the time though!

Regular potatoes are quite high in calories and aren’t as nutrient dense as other vegetables, so I didn’t want to eat them too often.

We also had a yummy, easy dinner a couple nights ago that I loved.  I bought this beef a Costco a while ago and it was great!

It’s just high quality beef seasoned with salt and pepper.  Nothing more, nothing less.  It’s so flavorful though!

It also made dinner time a snap.  I made some mashed potatoes and veggies on the side.  Easy peasy.  I didn’t even make any gravy, we just drizzled a little bit of the meat juices on the potatoes for some flavor.

I’ve been having this for breakfast the past several days…

Just a veggie, egg scramble (onions, peppers and spinach) topped with salsa.  I’ve also been loving blueberries on the side.

I’ve been having my favorite warm lemon water every morning as I drive the kiddos to school…

It’s so refreshing and seems to keep my body functioning well.  Love it.

One thing I learned with Whole 30 is that it is VITAL to always have quick, easy, healthy food on hand at ALL TIMES.  I can’t tell you how many times I had to quickly grab things as I was running out the door.

Pregnancy is FREAKING Hard + Fun Celebrations at our House

So, baby STILL isn’t here, but I did go to the doctor today.  Woo hoo. I’m dilated to a 3 (I was a 2 last week) and my doctor said if baby doesn’t come by Sunday, she will INDUCE me!  YAY, yay, yay, yay, YAY! There is a light at the end of the tunnel, folks. So, I’m scheduled to be induced Sunday morning.  I’m Group B Strep positive though, so they will give me antibiotics for 4 hours before they “officially” start me.  Dang it. *********************** Sooooo, can I just complain for a little bit!? Fighting Insecurities and Pluggin’ Along

I went to my favorite killer class at the gym this morning and I’m SO GLAD I did! We did 120 pushups (I did them all on my knees), a bunch of planks (I can’t do those, but I modified them pretty well), a bunch of killer squats, lunges and killed the entire upper body.  Yes, it thoroughly kicked my can, but I loved it. Happy Monday everyone! Actually, I’m very glad this Monday is coming to a close because it has been a VERY looooooong day. 😉 I am happy to say I started my day off with some Oats in a Jar though!  I always get so excited when we empty a jar of peanut butter ’round here. I just made my typical Chocolate PB Oats (minus the peanut butter) and then put the hot oatmeal into the (almost) empty jar of peanut butter and topped it with some bananas and hemp seeds.  It is so so good and SO SO filling! Lose 10 Pounds in 10 Days!? Sure!

I hope you all had a wonderful weekend!  Kev and I went out on a date Friday night and had a great time!  We went to Texas Roadhouse for dinner and it was so yummy! I ordered an 8 oz Sirloin Steak with a sweet potato and side salad.
