The BEST Pumpkin Chocolate Chip Cookies EVER!

Happy Friday everyone!!!

I figured since it IS Friday and I AM VERY pregnant and tired, it’s the perfect time to post one of my favorite mental health recipes! (i.e. not healthy at all, but so dang yummy and very good at lifting the spirits!)

Ha.

This recipe is for the best Pumpkin Chocolate Chip Cookies EVER!  Oh, and they’re topped with Cream Cheese Frosting too.  I’m SO SERIOUS when I say they are the best ever guys!  I got this recipe from my friend Judy and she is FAMOUS for it.

Sooooo, here ya go!

Pumpkin Chocoalte Chip Cookies

Pumpkin Chocolate Chip Cookies with Cream Cheese Frosting

Makes 36 cookies

Cookie Ingredients:

  • 1/2 cup butter; softened
  • 1 1/2 cups sugar
  • 1 egg
  • 1 cup canned pumpkin
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 2 cups semisweet chocolate chips

Cookie Directions:

Preheat oven to 350 degrees.

Combine flour, baking soda, baking powder, salt, nutmeg and cinnamon.  Set aside.
In medium bowl, cream butter, sugar and egg together.
Add pumpkin and beat until creamy.
Add dry ingredients to pumpkin mixture and mix until well combined.
Add vanilla and Chocolate Chips.  Mix.

Drop by spoonful onto baking sheet lined with parchment paper (or coated with cooking spray.)

Bake at 350 degrees for 10-12 minutes, or until cooked through.

Pumpkin Chocolate Chip Cookies

After cookies are cooled, top with frosting.

Frosting Ingredients

(This makes a LOT of frosting.  You could either half the recipe or save the leftover frosting for something else):

  • 1/2 cup butter; softened
  • 1 8 oz. container cream cheese; softened
  • 3 cups powdered sugar
  • 1 teaspoon vanilla

Frosting Directions:

Cream butter and cream cheese together.  Add sugar and vanilla and mix well.

Top cooled cookies with frosting!
