We had a very fun, eventful weekend! On Friday night, I was able to go to the Jazz vs. Portland Trailblazers game with my parents and uncle. I love going to the game with them. It makes me feel like “the kid” again, lol! 😉
Our tickets were in one of the suites, so they had dinner and all sorts of goodies available. I didn’t take a pic of my dinner plate (dang it), but I had Philly Steak sandwich filling (no bun), one chicken tender, one meatball, some salad, fruit and chips with AMAZING guacamole. Yummy, yum.
At halftime, they always bring in ice cream sundaes. I really wanted one, but decided to opt out. I try to save my “treat indulges” for my absolute favorite treats!
I had a wonderful night with some of my favorite people, great food and a great game! Go Jazz!
Yesterday, we went up to my parent’s house for a little Super Bowl party. We had a yummy dinner…

I must say I went back for seconds on the beans. They were superb. I also snagged a couple puffy Cheetos too. They tasted surprisingly good to me, lol!
Well, my mom asked ME to bring the dessert AND she asked me to bring two different things. Aughhh! An easy way to handle this would have been to make some desserts that I don’t like. But….
First of all, there aren’t too many desserts I don’t like AND second of all, my whole family loves chocolate, so I had to make desserts that were chocolatey, dang it.
I also must mention that I really do try to avoid sugary treats as much as I can, BUT if I’m going to have a treat, my motto is “Go BIG or go home!” When I indulge, it’s gotta be worth it.
So, I decided to make two insanely awesome treats! AND I’ve chosen to share both of the “recipes” with all my “healthy, happy peeps” out there because these are my two #1 treats in the whole entire world. I’m sorry if this derails any of your healthyness….
First , I made some Scotcheroos. My family calls them Oh Henry Bars, but most of the rest of the world calls them “Scotcheroos.” If you’re not familiar with them, you need to be! They are the perfect little peanut butter chocolate treat. My mom used to make them when I was little and they are definitely a family favorite. I didn’t take any pics (lame), but here’s a picture I found on the internet.
And here’s my recipe…
Scotcheroos (a.k.a. Oh Henry Bars)
1 cup sugar
1 cup light corn syrup
1 1/2 cup peanut butter
6 cup crispy rice cereal
1 cup semi-sweet chocolate chips
1 cup milk chocolate chips
1/2 cup butterscotch chips
Combine sugar and corn syrup in saucepan on top of stove. Cook slowly over medium heat until sugar dissolves and the mixture just starts to bubble. Remove from heat. Stir in peanut butter and mix well. Add crispy rice cereal and stir until well coated. Press into 9×13 pan.
Topping: Put semi-sweet chocolate chips, milk chocolate chips and butterscotch chips in a large glass bowl. Microwave on high for one minute. Stir. Microwave for 30 seconds. Stir. Microwave for 30 more seconds. Stir and pour onto the peanut butter/crispy rice mixture. Let stand until firm.
SO GOOD!

My other favorite treat is chocolate chip cookies. I have to say that THIS is the best chocolate chip cookie recipe ever! I found the recipe in a cookbook back when I was in college, but I added a little more flour to it and it is now the best! I can’t tell you how many people have requested this recipe from me. I LOVE it so much.
**When I lived in New England (~300 feet elevation), I used 2 3/4 cups flour for these, but now that I’m in Utah (~4,500 feet elevation), I use 3 cups! I don’t know why elevation effects baking, but it does!
The Best Chocolate Chip Cookies (they’re gold!)
2 3/4 cups flour (lower elevation) or 3 cups flour (higher elevation) **adjust it according to your elevation**
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup shortening
1/2 cup butter
1/2 cup sugar
1 cup brown sugar
2 eggs
1/2 teaspoon vanilla
chocolate chips (however many you prefer!)
Stir flour, soda and salt in mixer bowl. Set aside. Beat butter and shortening. Add sugars and beat. Add eggs and vanilla, beat well. Add dry ingredients. Beat. Stir in chocolate chips.
Bake 8-10 minutes at 375 degrees. Enjoy!
I wish you guys could taste these….you’ll just have to make your own….on your cheat day….and enjoy every bite! 😉

Melanie, you have the most adorable family ;). I wish my parents were into sports…I am almost positive that we’ll never go to a game together. If we do, they’ll be snoring away.
