Hello! Well I gotta say that my healthy eating, exercising and New Year’s Resolutions have been “interesting!” Ha ha.
First off, I’ve been killin’ it with my workouts. Wahoo! I haven’t missed a single day, except for Sunday (I always take Sunday off.) I’ve been loving my workouts and actually look forward to them every time!
My gym shared a really cool video on their Facebook page the other day that I want to share. I think they filmed it last Saturday. I’m in the background of the video quite a bit (I’m the lady in the pink tank, ha ha.) Soooo fun!
Well, sadly my diet has been all over the place! I know that diet is at least 80% of the equation, so I know I gotta get it together. It’s been frustrating. I haven’t been eating large volumes of food, but I’ve just been craving (and eating) a lot of crappy things! Auuuughhh.
It seems like I’ll eat very well most of the day and my macros will be right on track aaaannnnnd then I’ll bake cookies!!
It’s becoming a trend. Not good!
I think I’m going to chalk it up to “crazy hormonal lady crap,” because that’s what it feels like. I’ve just been cravin’ ALL THE SUGAH! I’m hoping in a day or two things will calm down and I’ll get a grip once again.
Ya know, there have been days when I’ve been able to fit some treats into my macros just fine. For example…
I started out my morning like this the other day…
Um ya. In my defense, we’d driven by Winco the night before and since Winco is not close to my home….we had to stop. We had to stop because they have the best peppermint patties and chocolate covered almonds on the planet. I’m serious guys.
Those peppermint patties taste nothing like York (although I like York too!) These are divine! The chocolate covered almonds are second to none too. BTW, they can both be found in the bulk foods section in case you want to hunt them down.
Anyway, after I ate those peppermint patties, I thought, “Awww dang, that is not a great way to start my macro counting today!!”
This was the macro ratio for the peppermint patties!
Soooo, I decided to make my breakfast “complete” by adding 4 oz. of chicken to it!
Bwhahahaha! This is NOT a typical breakfast for me! I laughed out loud when I entered it into My Fitness Pal….
However, for lunch I made myself one of my big random Protein Shakes and everything was back on track in My Fitness Pal…
That is what I loooooove about macro counting!!! You can have little splurges here and there as long as it fits in the macros.
I have a couple other healthier sweet treats that I’ve been having lately that don’t kill my macros. This is one of my favorites….
Two of my Protein Brownies + a serving of my protein pudding (1 cup plain Greek yogurt, cocoa powder, a pinch of stevia and a little bit of unsweetened cashew milk.)
I actually love to put half of the protein pudding on the brownies and top it with a little whipped cream. It’s so good!
This is quite a big “snack/treat/meal,” but it’s so satisfying and always fills me up! It’s full of a lot of good things too! The macro count for this “meal” is 394 calories, 8F/41C/37P.
Not too shabby!!
I also made me one of my strange “chocolate egg white concoctions” the other day. I shared the recipe in this post (scroll to the bottom of the post) if you care to see it.
I topped it with a little Walden Farms chocolate dip, some PB2 and whipped cream. I can’t say it’s the yummiest treat ever, but it’s high in protein and low in carbs and fat (3F/13.5C/25P.)

K, so I’ve obviously been lovin’ the sweet stuff this week! I also want to share a couple of non-sweet things that I’ve loved too!
I made some awesome nachos this week that I’m sure I’ll make again!
I really wanted nachos because Kev and a couple of the kids were having them and they looked so good! Buuuut, I knew I’d have to get creative in order to not completely kill my macros. Soooo, I decided to make the “chips” out of a Flatout.
I just laid a Flatout on a cookie sheet, sprayed it with a little olive oil, sprinkled it with seasoning salt and cooked it for 10 minutes at 350. I then cooked it on broil for a couple minutes more to crisp it up a bit. Then I broke the Flatout into pieces as my chips. I topped the chips with a little cheese and leftover pulled pork and heated it all in the microwave. I then topped everything with salsa, green onions and cottage cheese.
So darn good and so filling! I have no idea what the macro count is, but the Flatout was 1.5F/14C/9P. The pulled pork and cottage cheese upped the protein content even more. Obviously the cheddar cheese was full of fat, but it was worth it and it fit in the macros. I know a lot of macro counting people use lower fat cheeses. I might need to try that. I really don’t eat cheese too often though.
I also made this for breakfast for the fam last Saturday…
We call these Moons Over My Hammy after a similar item on Denny’s menu. It’s basically just a grilled sandwich full of scrambled eggs, ham and cheese. It’s so good!
I made mine with scrambled egg whites, double ham and on SaraLee Delightful bread.
I buttered my bread with about a Tablespoon of butter. Sometimes I just spray it with a little olive oil instead, but I love the taste of the butter on there!
The macros for my sandwich were 427 calories, 24F/19C/36P. That’s actually not too bad considering the Denny’s version is 980 calories, 65F/55C/43P! This is such a good sandwich and so filling!
Well I think that’s all I have to share about my healthy or not-so-healthy diet these days! I’m just going to keep on pluggin’ along hoping I can chill on the sugar consumption. Ha ha.
I do have a couple of pictures I want to share! We went to a very fun Neighborhood White Elephant Christmas Party last weekend and had a blast! We do this party every year and we always do it in January because December is nuts for everyone! It’s always a lot of fun to see what everyone brings for their White Elephant gifts!

We have (from left to right): Cat gel clings/WWE stickers/an Anteater Bug Vac (we brought those things), a giant peppermint stick + “Shave and Play” barbie, a Crazy Cat Lady Set + a beautiful picture of ME as a crazy cat lady!, a Do-it-Yourself Prostate exam kit + 2 Baby Ruth candy bars + a poop Emoji pillow and a disco ball! The small box in front is a multi-colored nightlight for a toilet seat. The pillow on top had a high school yearbook picture of one of our friends on it!
Awesome.

I also feel the need to mention that I went to the gym right before this party! I literally ran in the door, hopped in the shower, threw some clothes on and threw the hair up in a clippie! Ha ha. I’ve been trying really hard not to miss a workout, so this is how I roll!! I actually think the “crazy cat lady” picture is more flattering than the actual picture of me!! #seriouslytho
It’s alright though…I don’t really care…I just feel the need to share.

It was so beautiful! We had a LOT of snow last week and I thought it made everything look so peaceful. This week we had a lot of 40+ degree temperature days, so most of the snow melted! Then it decided to get cold again today and snowed quite a bit. The weather has been nuts this week!

We are finally rid of all the treats people left here over the holidays. Chocolates, cookies, candy. I’m good about not buying that stuff, but when it’s right in my face all day every day, well …
Our family has a hilarious white elephant gift exchange for Christmas every year. It’s how we’ve ended up with two complete beer pong sets that we’ve never opened (really, someone made those? Why?), and a number of other interesting items. Some of them we keep in constant circulation. It’s fun to see who ends up with them. Some automatically go in the yard sale pile.
