We Had a Wonderful Time in Saint George!

Well, we’re back from our wonderful getaway to St. George!  We had such a great time and the weather was beautiful.  It was right around 70 degrees and sunny.  Loved it!

I have a million and one pictures to share with you guys, so here goes nothin!

On Friday morning, we drove over to Snow Canyon and spent the day hiking, exploring and playing.  We first went on a 4 mile hike (round-trip) to some Lava Tubes and it was so cool!

Once we got to the lava tubes, the kids enjoyed climbing down inside and exploring around.

After we hiked back from the lava tubes, everyone was very tired and hungry.  Thankfully, we brought a picnic lunch with us consisting of Peanut Butter and Jelly sandwiches, grapes, apples, Cheez-It Crackers and fruit leather.  Everyone agreed that PB&J never tasted so good, lol!

After lunch, we headed over to the Sand Dunes in Snow Canyon.  It is such an amazing place full on TONS and TONS of soft, fine red sand.  It’s beautiful!

The other kids filled up my 10 year old’s shirt with sand and laughed and laughed and laughed!

They also loved making sand angels.

The sand felt SO good and was nice and cool.  The kids enjoyed burying Kev and he actually fell asleep!

We stayed and played at the dunes for 2 hours and the kids wanted to stay even longer!  It was a lot of fun.

Afterward, we got some food for the kids and took them back to the condo where we were staying.  Kev and I decided to sneak away for a quick date.  We got some dinner at the Mongolian Barbeque and it was wonderful!

Everything tasted so yummy and fresh, but we brought most of it home.  Those bowls were huge!

On Saturday morning, the kids really wanted to go swimming, so we headed over to the pool.  Sadly, the pool was FREEZING!  I mean like “somebody filled the pool with a bunch of ice and a giant glacier” kind of cold.  It was crazy!

My big kids still jumped in and “swam” for a bit, but everyone enjoyed the hot tub a lot more.

Since I’m the pregnant lady, I sat on the sidelines and took pictures. 😉

Later on, we headed over to my daughter’s dance competition, which was the main reason we went to St. George.  She did a great job, but sadly I didn’t take ANY pictures!  Lame.

She performed two dance numbers and we had about an hour to kill between the two, so we headed over to Pioneer Park and Dixie Rock for a bit.

My poor daughter had to hike around in her dance costume, but she still had a great time.

After the dance competition, we took the fam out to dinner at the Black Bear Diner.  It was fabulous!

I decided to order me some breakfast food and it was amazing!  The portions were huge though!  I took home half of my plate…

On Sunday morning, we headed back home.  On the way home, we stopped to visit the historic Pine Valley Chapel.

It was built in 1868 and is the most amazing building!  Also, church is still held in this chapel every Sunday.  Isn’t that cool?  It’s also nestled in the cutest valley ever.

We took a tour and I loved hearing all about the rich history.  We had this picture taken inside the chapel…

After touring the chapel, we decided to check out the small local cemetery.  It was neat to see the old graves, some of which were of original pioneers who crossed the plains to get to Utah.

Well that’s pretty much our trip in a nutshell.  It was wonderful and so nice to get away for a bit.

I have to say that for some reason my body decided to blow up like a giant marshmallow on this trip!  I don’t know if it was from all the driving, the food we ate or what, but it was very depressing.

When we got home from our trip, I jumped on the scale and just about cried!  I’m happy to say that I think it was mostly from bloating and water weight though.  On Monday, I decided to eat really well and I seriously had to go to the bathroom all day long!!  I could feel the poofiness melt off my body.  I weighed myself again last night and I was down 7 pounds.  Isn’t that crazy??!

Oh, and FYI I’m now up about 12-13 pounds total with this pregnancy.

Anyway, my crazy bloated marshmallowness really motivated me to kick it up a notch!  Soooo, I came up with a one month healthy challenge that I started yesterday.  I’m basically going to try to eat as “real” as possible and load up on the fruits and veggies.  I’m also going to avoid all treats, white flour, fast food, greasy fried food, etc.

I’ve only been doing it two days, but I already feel so good!  I know it will be hard because I have a lot of fun events coming up this next month, but I’m going to stick to my guns!

Anyway, it’s getting very late and I’m a very tired mom.  I will tell you more about my healthy plan tomorrow!  Have a great night. 😉

    What a wonderful weekend!!
    Those pictures are all so amazing – the hiking in the lava tubes looks awesome. And, that picture of your 10 year old’s shirt filled with sand cracked me up!!!

      Thanks so much! We had a wonderful weekend. My kiddos had so much fun in the sand. I laughed so hard when I saw my son’s big ol’ sand belly. Too fun!

    I really enjoyed your post (as usual)! I’ve never heard of lava tubes before, that was fascinating. Kind of like tiny caves?

    You inspired and helped me to come up with a great fun beginner’s health plan, and I’m loving it! I can’t wait to hear about your one month healthy challenge!

      Yes, the lava tubes are a lot like little caves that were carved out from an old volcano eruption. They are so cool! Good luck on your health plan!! I hope you feel great and get the results you’re looking for. 😉

    I actually think you’re joking about being pregnant – I don’t think you look it at all, haha! You still look so small to me! That trip looked fun, too bad the pool was so cold, bummer!

      LOL! You’re so sweet. I’m sure in the next few weeks you’ll see a big ol’ baby bump (or square!) emerging! We did have a wonderful trip, but were sad about the cold pool. 🙁
