I have to laugh at some of the food combinations I’ve been coming up with lately! It all started last week when I realized I had a TON of food in my freezer that needed to be used.
BTW, I LOVE to purposely make extra of almost everything I make so I can FREEZE the leftovers! It really, really makes it so much easier to eat well. My favorite things to freeze are soup, protein pancakes, protein bars, protein balls, chicken and MORE chicken!
Anyway, this past week I’ve been on a mission to clean out the freezer! So, here are some of the food concoctions I’ve come up with…
A yummy omelet (1 egg, 3 egg whites, spinach, peppers, onions and feta cheese) topped with sliced tomato and low sugar ketchup. I also had some CHICKEN on the side topped with a little Cucumber Dill Yogurt dip.
This was actually so so good and totally hit the spot! In fact, I loved it so much, I had it 4 days in a row (I didn’t take a picture the 4th day!)…
The next day I decided to change it up a bit…
Vanilla Banana Oatmeal + CHICKEN!
Ya, I’m a little weird. Surprisingly, the chicken tasted so awesome for breakfast….and it filled me WAY up! I kind of got a little hooked, obviously! 😉
Ya know, before last week it had been quite a while since I had even had an omelet. I decided I needed to start making them again because I needed to use up this…
HOLY mammoth SPINACH!! I told Kev to swing by Costco on his way home from work last week. He said they were out of our usual nice, manageable tub of spinach. Soooo, he got this monster! Woah! Soooo, I started making omelets, salads and protein shakes like a bat out of heck.
I’m sorry to say I will not be getting through the entire bag. It is just starting to wilt and I’m only about half way through it. 🙁 Oh well, I’m definitely getting loads of vitamins and minerals!!

Here are a couple other random (and not so random) things I’ve been eating lately…
Ezekiel Bread topped with Smart Balance and served with a side of blueberry Chobani yogurt topped with a little Pumpkin Flax Granola. Yum!
Cherry tomatoes from the garden and Cocoa Roast almonds.
Of course, plenty of Protein Pancakes (my fav!)…
Chocolate Spinach Almond Protein Shake!
And this is what I had for lunch today….
Chicken Veggie Soup + leftover fajita meat, onions and peppers (both from the freezer!) topped with a little lite sour cream and salsa!
This was so yummy AND I have plenty more of it in my freezer, so I’m probably going to have this for lunch the rest of the week. YUM!
For dinner I just made tacos. Tuesday is our CRAZIEST night of the week, so I always keep dinner simple. I had my taco in a Flatout (sorry, no pic.) I filled it with taco meat, fat-free refried beans, tomatoes, cheese, lite sour cream and of course, SPINACH!
So there you have it. Creative, albeit weird meals using up my freezer stash! Love it! Hope y’all have a wonderful night!!
