Hey all,
So far, today has been great! Kev and I started the morning off with a 7 1/2 mile run (Kev did 8, but I was spent at 7 1/2). The first half of the run felt great, but I started to fizzle around mile 5 1/2. We left later than we wanted to, so it started to get HOT. My lower body was also a little stiff and sore from a killer workout I did a couple days ago too. Excuses, excuses, I know. I’m just keepin’ it real folks. But, the important part is that I finished! Yay!
That is really the main simple rule of running….just keep going! Sometimes it is FREAKING hard, but keep going and you’ll be glad you did!!
Before our run I had a piece of whole grain (very seedy, high fiber) toast with almond butter and a couple slices of apple. It was a perfect pre-workout meal. It didn’t make me feel too full, but it seemed to fuel me well.
Yesterday, I had a very easy healthy breakfast that I thought I would share. It’s usually what I make on the days when I’m in a hurry or I want something simple.
It’s just a bowl of healthy cereal with fruit and a side of egg whites with veggies.
I actually mixed two cereals…Kashi GoLean and Nature’s Path Organic Pumpkin Flax Plus Granola (they really need to consider a new name for that one!)
I love most cereals by Kashi, but GoLean is my favorite! With 10g of Protein and 13g of fiber, you can’t go wrong! I also love that Kashi is committed to using real ingredients in their products. Oh, and Jillian Micheals recommends GoLean as well. 🙂
I also LOVE the cereal by Nature’s Path. I buy it at Costco and it is so so good! However, it is very calorie DENSE (260 calories for 3/4 cup…milk not included!), so I usually only add a little bit to other bowls of cereal. It adds fiber and protein and has a very refreshing list of ingredients that includes all real food. Yay.
I added some blueberries and raspberries and a little skim milk. Yum.
I then scrambled 3 egg whites with spinach. It took me all of about 1-2 minutes. Egg whites are a GREAT protein source by the way. One egg white contains 4-5 grams of protein and is only 15-20 calories! Awesome! I usually buy the big ‘ol pack of eggs at Costco and just separate the egg whites out, but you can use egg substitute (i.e Egg Beaters) as well.
I first sauteed some spinach in a little olive oil. (Don’t mind my nasty lookin’ pan. I made the kids scrambled eggs in it beforehand…)
Here’s another little tip….I bought a neat little oil sprayer at TJ Maxx a while back. It was about $7 or so. You just fill it with olive oil, pump it, and spray it. Works great and keeps calories down. Here it is…
You can also use good ‘ol Pam too.
Anyway, after the spinach wilted a little, I added 3 egg whites. FYI, I beat my egg whites with a little pepper and Mrs. Dash. Then I just scrambled it all.
This whole breakfast was very yummy and VERY filling. All for about 300 calories (if I cut the granola, it would have saved some calories too).

Yummy breakfast. I’ll have to give it a try. It reminds me of a super simple breakfast we make. We soak oatmeal overnight in milk. (Equal amounts- so 2 cups oatmeal, 2 cups milk, etc). In the morning we eat it with our favorite toppings (like berries, sliced almonds, a little brown sugar, etc.) It’s pretty healthy and all the kids like it. Score!

You add an extra step that I do not. I just throw the spinach right into the egg whites while they are cooking and they sautee into the eggs and it is still so yummy. I also love to add a few tomatoes and onions. 🙂 You are awesome Mel. We can both be healthy together.
