I started off this morning with my favorite breakfast!
Chocolate Protein Pancakes! I topped them with a little natural peanut butter, strawberries, blueberries and a drizzle of agave nectar. Yummy, yum, yum! I could eat these every day! They are so good.
I made them for my little sister while she was visiting a couple weeks ago. I must say, she was a little skeptical. I started telling her everything that was in them and she said, “Maybe I don’t wanna know!” LOL!
BUT, she loved them! She said she could eat them every day too! I was happy. 🙂
For lunch, I decided to clean out the fridge.
Leftover chicken from dinner last night, leftover brown rice from a couple nights ago and Raspberry Chobani yogurt (which happens to be on sale this week for $1!) Yay!
I don’t know what in the heck we’re doing for dinner tonight. Hmmmm. It’s Friday, so I’m not particularly motivated to cook. I’m sure I’ll think of somethin’.
I did make a yummy dinner last night though.
Chicken, Roasted Summer Veggies and a slice of Ezekiel Bread topped with a little natural peanut butter! Yum! I made baked potatoes for Kev and the kids, but I had the toast instead.
I really love Ezekiel Bread. It is the bomb. First off, check out these ingredients…Organic Sprouted Whole Wheat, Filtered Water, Organic Malted Barley, Organic Sprouted Whole Millet, Organic Sprouted Whole Barley, Organic Sprouted Whole Lentils, Organic Sprouted Whole Soybeans, Organic Sprouted Whole Spelt, Fresh Yeast, Organic Wheat Gluten, Sea Salt.
Holy COW. How in thee world do you make bread out of just that?? Love it!
Food for Life also makes several other great breads and products too. You can buy them at health food stores or in the health food freezer section in most grocery stores. I love companies that make awesome food. Yay.
Kev and I loved this meal. It was pretty easy to throw together too. Here’s how I did it.
I just cut up a bunch of chicken and marinated it in a little “Zesty Herb” McCormick Marinade. I mixed the marinade up in a big ‘ol Ziploc bag and then added the chicken.
This does not look yummy, I know. 😉 I put this bag in the fridge to marinate while I ran to the gym.
I also cut up 2 small zucchinis, 2 small yellow squash, 4-5 carrots and an onion. I put a little olive oil (maybe 3-4 T.) and a few shakes of seasoning salt into yet another big ‘ol Ziploc bag. I added the veggies, zipped the bag up and shook it up really well.
I then poured it into a 9×13 pan, covered it with foil and threw it in the oven on a timer while I ran to the gym. I baked it for about 25 minutes at 350 degrees.
When I got home from the gym, I cooked up the chicken in my electric frying pan.
and pulled the veggies out of the oven.
Easy as that. Love it. Since it’s “squash season” at our house, I know I’ll be making these veggies a TON! Yay!
So there ya go. Yummy, Healthy FOOD!

I love the recipes!! Thank you!! I’m a HUGE Ezekiel fan, too!! Try their Cinnamon Raisin bread. My kids have it for toast, French toast… and love it. It also has a low Glycemic Index. I use the Ezekiel bread for hamburger buns – or even buy their hamburger buns! LOVE IT. I saw Holly’s recipe for a Grilled Veggie sandwich on her page… Looks good. It’s something, I’ll also have to try. As for Chobani……. I have the Chobani NF Greek Vanilla Yogurt – every morning for breakfast – stirring in a spoonful of cereal. I get it by the case! at Wholefoods. They give 10% (sometimes 20%) off for case items. I love it.

I’ve seen the cinnamon raisin bread, but never tried it. What great idea to use it for French toast! Love that! I’ve never tried Holly’s grilled veggie sandwich, but have wanted to. It looks awesome!

Mel! I’ve totally been craving your chocolate protein pancakes! Seriously, I’ve been telling everyone about them! I’m a little intimidated to make them myself (with all your weird ingredients and all), but I’m totally going to do it anyway. I’ll let you know how it goes. : )
