On Friday night, Kev and I went to see the movie Gravity.
Holy COW, it was intense! This is how I looked throughout the entire 91 minutes…
Ya.
I had a headache when it was over. It was an incredible movie and the acting was phenomenal. I also have no idea in the world how they made it look like they were actually in space!
It was insane and very cool.
Oh and I love Sandra Bullock. She is wonderful and she’s also in amazing shape!! She’s almost 50 and her body would put most 20 year olds to shame. Crazy.
Anyway, we had a fun night. 😉
On Saturday morning, Kev and I were able to attend General Conference with one of my best friend’s in the world, Kristen and her husband Clay.
General Conference is a semi-annual meeting for our church where we listen to inspiring talks from our church leaders. It always gives me such a spiritual boost and I look forward to it every 6 months. Love it. It was especially fun to go with such wonderful friends…
Afterward, we grabbed some lunch at Red Rock. It was wonderful and I got the best salad E.V.E.R! I ordered the Cobb Salad and I know it will be calling my name again.
It was loaded with chicken, bacon, avocado, hard boiled eggs, tomatoes and a bunch of other yummy stuff. It barely even needed any dressing because it was so flavorful. I’m going to try to replicate it at home. I’ll let you know how it goes. 😉
Kev got a burger that was in a pita pocket and he said it was great. Our friends actually ordered the same things too…
I went to Red Rock several months ago with some of my girlfriends (including Kristen) and I ordered a salad that was very much sub-par. I was pleasantly surprised with how FREAKING yummy this salad was! Loved it!
Later on, I ran over to the gym for a bit to get a quick upper body workout in. It was great and the gym was dead. I had most of the machines and free weights all to myself. Yay.
Yesterday, we went up to my parent’s house for a BBQ. It was wonderful, as usual, and this time my food assignment was 7 Layer Dip!
Yuuu….ummmm! I love, love, love 7 Layer Dip!
There are a million and one different 7 Layer Dip recipes kickin’ around the internet, so I thought I would add mine too.
My recipe is pretty basic, simple, easy, healthy-ish and yummy (love it!), but you could get creative and add other things if you so desire. 😉 I’ve seen some people add taco meat, taco seasoning, cream cheese and a bunch of other stuff.
But, here’s how I made mine….
Ingredients:
- 1 can (16 ounces) Fat Free Refried Beans
- 1/3 cup salsa
- 1 (16 ounce) container prepared guacamole (you can also make your own if you like!)
- 3/4 cup low-fat sour cream
- 1/3 cup shredded cheese
- 3 roma tomaotes; chopped
- 1/2 cup olives; sliced
- 3 green onions; sliced
Directions:
In medium bowl, mix refried beans and salsa until well combined.
On large platter, spread bean/salsa mixture, then guacamole, then sour cream….
Then add the remaining ingredients (cheese, tomatoes, olives, green onions) in any order you like.
That’s it! Most people use tortilla chips to dip with, but you could also use veggies, healthier crackers (Triscuits, Food Should Taste Good, etc.) or homemade pita chips.

I hope you love this recipe as much as we do. It’s the perfect thing to bring to a party or gathering too. Love it.
Also, if you only eat one serving (I estimate there are about 15 servings in this recipe) and don’t go overboard on the chips, this can actually be a pretty healthy snack/meal.
In fact, my baby and I just snarfed a bunch of it for lunch today! However, I’m warning you it’s very tough to stop eating once you start!
Well, I’m heading out to go to dinner and shopping with my mom and sister tonight so I better jam!

That dip looks wonderful. I’m in charge of appetizers for Thanksgiving this weekend (yes, we celebrate Harvest season in October in Canada) so I just may make this recipe. Thanks for sharing. I know that feeling when you get an intense headache from a loud, busy movie. Agree, Sandy B looks awesome!

Whoa, there is a lot of sodium in that dip. It looks scrumptious though. Now that I have to have a low fat/low sodium diet though, I guess I should avoid it. 🙁

I’m sorry you’re on a low sodium/low fat diet Kathy, but I guess all of us could benefit from that! 😉 If you wanted to experiment a bit, I’m sure you could decrease the sodium in this recipe. Most of the sodium comes from the beans, guac and cheese. You could look for some low-sodium refried beans, make your own guac and leave out the cheese altogether! I hope you feel better soon.

Whole Guacamole for the win! I love it so much. I think it is so good and I’m like “why would I make this myself when this is so good?!”
I’m going to have to try out this dip recipe. In the recent years, I’ve actually started liking refried beans, whereas I couldn’t stand them when I was younger. I can’t think of refried beans and not think of this silly thing my husband always does when I talk about them — he’s like “why’d they have to refry them? Did they not get done the first time?” It makes me laugh every time he says it but I’m easily amused. 🙂

I completely agree with what you said about Wholly Guacamole!! Why take the time to make it myself?? Ha, ha I also love what your husband says about refried beans. Too funny!! I used to not like them too (quite frankly, they look gross!), but now I really love them.
