Baby Stuff + Healthier Chocolate Chip Cookie Mug Cake!

I hope you all are having a wonderful weekend!

My sweet baby Carson will be three weeks old tomorrow.  Wow.  Time is flyin’!  He’s such a cutie patootie and we’re all enjoying him so so much!  He’s a lot more alert now and really enjoys looking around, especially at the lights and ceiling fans. 😉

He’s also starting to coo a little bit and it melts my heart!  I’ve seen a couple sweet smiles too.  I can’t tell if they’re “real” smiles yet, but I’m lovin’ them nonetheless.

Isn’t that the sweetest!??!  I just thought it was so cute how she packaged everything!  Loved it.  My sis is also a HUGE Superman fan, so I love that cute little onesie.  It makes me miss her. 🙁

I really, really love having a baby in our home.  I’m completely worn out and sleep deprived, but I’m really trying to soak up every single second.

I’m really looking forward to being able to exercise again.  I think I’ll start going on walks in a week or two.  It will be nice to be outside and soak up the sun.  Heaven knows I could use a little Vitamin D right now!  I think my 4 year old will enjoy it as well.

I seriously can’t imagine running….ever….again though.  My body still feels so jacked.  It’s weird.  In fact, I made a quick Wal-Mart run today and when I was walking back to my car, I decided to run (more like slow jog) a few steps just to see how it felt.

It wasn’t good folks.  I probably looked ridiculous too.  My body just felt so weird, almost as if I was still 9 months pregnant!  It made my stomach ache too.  Crazy.

Kev told me I needed to “chill” and “be patient.”  I know I do.  I was just curious.  I will officially be able to exercise again in three weeks.  I’m just hoping my body feels more normal by then.  We’ll see…..

I will of course take it easy and start out slow.  I’ve told all my big kids that they should run with me when I start running again!  I would love to train for a 5K or 10K with them.  So far, I don’t have any takers. 🙁  I’m going to keep working on them though.

I’ve still been trying to eat well, although I struggled quite a bit this week.  I’ve cut myself some slack though because I know I’m sleep deprived and hormonal.  It’s so hard to consistently stick with a healthy diet right now!  It’s alright though, I know it will continue to get easier each week.

Anyway, with that being said, I have a wonderful recipe I want to share with you guys!  It’s for a Chocolate Chip Cookie Mug Cake and it’s so yummy!

Chocolate Chip Cookies are one of my all-time favorite treats.  I also enjoy mug cakes because they only take minutes to prepare.  Soooo, I’ve been working on a Healthier Chocolate Chip Cookie Mug Cake recipe for quite a while and I think I finally nailed it!

Cooked Cookie in a Cup

I wouldn’t consider this recipe to be “healthy,” but it’s definitely healthier than your typical Chocolate Chip Cookie.  It’s also portion controlled because it’s a single serving.  AND, it only takes about 3 minutes to prepare.  Booyah!

Soooo, when you need a little “sweet treat” or a midnight snack, this may be just the thing!

Healthier Chocolate Chip Cookie Mug Cake

Healthier Chocolate Chip Cookie Mug Cake

Ingredients:

  • 1/2 Tablespoon butter (you can also sub Coconut Oil, but the butter gives it more of a “cookie” flavor!)
  • 1 egg yolk
  • splash of vanilla
  • 1 Tablespoon unsweetened Applesauce
  • 2 Tablespoons flour (I’ve used whole wheat, spelt and oat with good results.)
  • 1 teaspoon Sucanat (you can also sub brown sugar)
  • 1 teaspoon Stevia (or sweetener of your choice)
  • dash salt
  • dash baking soda
  • 1 Tablespoon chocolate chips

Ingredients for healthier Cookie in a cup

Directions:

Spray a mug with cooking spray.  Put butter in mug and soften slightly in the microwave (about 20 seconds.)

Add yolk, vanilla and applesauce.  Mix very well with a fork.

Liquid Ingredients for Cookie in a Cup

Add flour, sucanat, stevia, salt and baking soda.  Mix very well with a fork.

Add Chocolate Chips.  Mix well.

Batter for Cookie in a Cup

Microwave on full power for 40-50 seconds.  You don’t want to overcook it or it will be too dry.

Fully Cooked Cookie in a Cup

You can eat it straight from the mug, or pour it out onto a plate.  Enjoy!!

I realize this recipe still has about 250 calories, 15 grams of fat and 14 grams of sugar, but it is BIG and very FILLING!  Also, a typical Cookie Mug Cake recipe will run you upwards of 500 calories and twice the fat and sugar content.

Soooo, you should still consider this recipe an indulgence, but there is NO GUILT ALLOWED when you eat it, K?

    I love what your sister gave you, it is so cute and the clothes are adorable! Your baby is getting so big God bless. You look great so far so just be patient about loosing the weight I am pretty sure you will loose it in no time. I need to try to make the chocolate cookie mug cake because I never made it in a mug looks like fun.

    The mug cake looks delicious! I know how you feel about exercising. I had my 2nd baby in April, and I was SO SO SO excited when my doctor gave me the green light to workout again. It felt so good to get back into it!
