Last night, Kev and I had a lot of fun attending the VIP event at the new Cafe Zupas in South Jordan, Utah.
I’ve talked about Cafe Zupas a lot on this blog because I love it so much! They have so many healthy options and everything I’ve ever tried there, I LOVE!
I usually order the Mangoberry salad, but last night I decided to try something new. I ordered the Summer Chicken Salad (Chicken, Fresh Strawberries, Cashews, Dried Cranberries, Grapes, Mixed Greens, & House-Made Fresh Strawberry Vinaigrette Dressing) with a small bowl of Tuscan White Bean and Vegetable Soup.
I loved both of them SO much! They may be my new favorite things.
Because it was a VIP event, they also gave us dessert…so we couldn’t pass it up! We chose a Caramel Rockslide Brownie and a Million Dollar Bar and brought them home to the kids. I didn’t take an “official picture” of them, dang it, but you can see them in the picture above (in the little red bags.)
They looked fabulous.
Kev ordered the Chicken Chop Salad with a bowl of Wisconsin Cauliflower soup (his fav!)
We had a wonderful night!
Oh, and the Cafe Zupas at The District is officially opening tomorrow! They are also going to be having a fun “Grand Opening” event on December 5th-7th. They will be serving free desserts with every meal and on Saturday (Dec. 7th), they will be having fun $25 gift card drawings every 15 minutes.

Well, I have been craving soup all day long since I had the wonderful soup at Zupas last night. I’ve decided I’m going to make a yummy soup for dinner tonight.
A friend of mine gave me a recipe for White Chicken Chili several years ago. I love this recipe because it’s simple, tasty and yummy! I’ve changed the recipe a bit over the years, so here’s how I make it…
Easy White Chicken Chili
Ingredients:
- 1 pound chicken (~2 1/2 cups shredded chicken)
- 5 cups water
- 3 teaspoons cumin
- 1 1/2 teaspoons lemon pepper
- 1/2 cup onion; chopped
- 2 cloves garlic; minced
- 1 Tablespoon Olive Oil
- 1 (~15 ounce) can shoepeg white corn
- 1 (~4 ounce) can green chilies; diced
- 3 Tablespoons lime juice
- 2 (~15 ounce) cans Great Northern white beans; drained and rinsed
Optional toppings: Tortilla chips, shredded cheese, sour cream, avocado
Note: You can also use leftover cooked chicken in this recipe. If you use cooked chicken, sub chicken broth for the water.
Directions:
- Boil chicken in water with cumin and lemon pepper. Boil 30 minutes.
- Remove chicken from pot and cut into small chunks. Note: I used my food processor to simplify the process.
- Return chicken to broth water.
- Saute onions and garlic in olive oil.
- Add sauteed onions and garlic to the chicken/broth mixture.
- Add corn, chilies and lime juice to the pot and simmer 5 minutes.
- Add white beans and simmer 15-20 more minutes.
Top with desired toppings and enjoy!
This is such a wonderful, comfort food meal. The leftovers also freeze very well. I just pour them into individual sized containers and put them in the freezer. Easy peasy.

Oh man, his cauliflower soup looks so good – I need to PIN some kind of recipe for that and then put it on the list to make right along with your chicken chili. Mmmmmm!!
It really is a yummy soup. I need to find a good recipe for it too!
That chicken chili might be dinner for Thursday night – I might change it a little so that I can do it in the crock pot since I’m going to be gone all day.

We have a restaurant nearby, Zoe’s, that makes really good white bean soup flavored with rosemary that reminds me of the soup you ate. Your Chicken Chili looks good!

I love restaurants with healthy options. There are not enough of them available. Cafe Zupas looks like it has some yummy healthy alternatives.
I agree, I love healthy restaurants! It makes it so much easier to eat well. I wish there were more healthy restaurants out there too!
We love white chicken chili – all my kids do. Plus it is gluten and dairy free- a must at our house. I’ll have to remember the food processor trick!
It’s really a good, easy, kid friendly meal! That must be tough to avoid gluten and dairy while cooking for a family.
I have never heard of Zupas before but the salad you got reminds me of a yummy salad from Panera. I’ve never ever made white chili before, probably because I love tomatoes so much but your recipe looks really yummy!
Zupas is only based in Utah, Arizona and Nevada for now, but it’s growing fast! We used to live in New England and I loved going to Panera, but we don’t have Panera here. 🙁 Panera is very similar to Zupas. I love restaurants like that. 😉

Somehow I missed this post ! Anyhow, oh man that soup sounds sooo delicious. I don’t eat chicken anymore, but all the flavors are right up my alley… The cumin, lime, chopped avocado, etc . It’s what we eat all the time on vegetarian chilis and soups! Those brownies sound delish too !!
I really love this soup, in fact I love most soups! I love this time of year; soup always tastes so heavenly. Oh, and I pretty much love every kind of brownie out there too. 😉
