Well, we took a quick trip down to St. George for the weekend. I love it down there. It’s a fun little touristy town full of palm trees and sun! It’s about 300 miles south of Salt Lake City. My cute daughter was in a dance competition down there on Friday, so we decided to make a fun family vacation out of it. We had a lot of fun, but man am I worn out! Kev and I decided that right now family “vacations” are not about rest and relaxation…at all. They are more about quality family time and fun Continue Reading…
Turkey Burgers and Sweet Potato Fries
I love this meal! It reminds me of summer, but we make it year round! All of my kids love it too, which is a huge plus! I served the turkey burgers and fries alongside Greek Salad and fruit. Here’s how I made it. I prepared the Sweet Potato Fries first so they could be cooking while I made the burgers. Sweet Potato Fries (you can also make this same recipe with any kind of potatoes!) 3 sweet potatoes or yams; peeled and cut into fries 1/4 C. Olive Oil Seasoning Salt (to taste) Prepare the sweet potatoes. Peel them… Continue Reading…
Healthy Day + Great Gym Class!
Today was a great day! I started off with a version of my typical breakfast… 1/3 C. oatmeal + 1/2 of a chopped apple covered with water and nuked for 2 minutes in the microwave. When it came out of the microwave, I added a little more water and mixed in 1/2 scoop vanilla protein powder, 1 T. ground flax seed and cinnamon! Yummy!! Love it! I also had 4 egg whites w/ peppers, onions and spinach topped with a little low sugar ketchup. I love this breakfast….obviously. 🙂 *********************** I headed to the gym at 10:00 for one of Continue Reading…

Super Easy Crock Pot Meatballs and Sauce!
I’m so sorry for the blogging hiatus….especially after leaving you with such a depressing post. 🙁 I’m happy to say I’m slowly, but surely coming out of my little “funk.” Eating well and exercising makes me happy, but when life becomes chaotic and I “run out of gas”, I have a hard time staying motivated. So, I’ve been trying to get my sleep and spend a little time just “chillin’.” It’s been great and I plan to keep it up! 🙂 ************************** Anyway, I told y’all I would share I super duper easy recipe! I was talking to my friend Continue Reading…
Finding the Balance
I have decided…..I have issues. 🙂 I’ve had a rough couple of days. I’ve just been extremely busy busy busy (aren’t we all!?) and seriously draggin’. Here is my problem (I imagine a lot of you can relate.) I expect a lot out of myself. I am constantly doing something and most of the time I’m multitasking! I’m a really busy, busy person; probably too busy! I’m always trying to identify the things that are most important and weed out things that really aren’t. However, I’ve gotten to the point where I’m not willing to cut anything else off the Continue Reading…
