Low Carb Livin’ Day #1

Well I’m officially on the wagon “hardcore” today!  Yay!  I started off this morning with a great class at the gym.  It’s an “all muscle” class, which I love.  We just do an hour+ of mega weight lifting. However, out of all the classes I go to…..this one has the most intense, intimidating people by far!  First off, people congregate outside the door 15-20 minutes before the class even starts!  Then, when they finally open the doors and let us go in…..everyone floods in and frantically grabs benches, bars, mats, weights, etc. before they are all gone.  It is so Continue Reading…

Happy Birthday to ME!

I meant to post yesterday, but I was too busy partying for my birthday!  I had a great day. Sadly, I’ve been eating a whole lotta junk the past couple of days.  It’s been fun, BUT my body has felt very very grody.  Blah.  I guess I shouldn’t be surprised though. 😉 However, I must say this little hiatus from eating well has been really good for me.  My mind (and taste buds) really needed the break.  It’s almost felt like a mini vacation….and now I’m ready and willing to get back to work!  I’m looking forward to seriously getting Continue Reading…

Quick and Easy Chicken Broccoli Alfredo

I made a super easy, yummy and healthy dinner last night I thought I would share.  It’s fairly easy to prepare and comes together quickly.  Yay.  The kids all love it too, so everyone is happy ;-). Chicken Broccoli Alfredo Disclaimer:  I’m sorry I didn’t really measure anything.  Just prepare how much you think you and/or your family will eat! Weekend Update!

First off, I’m happy to say that Kev and I got an early morning workout in this morning!  Gasp!  I know it’s hard to believe….I woke up wicked early and I did it by CHOICE! Some people from our church recently organized a Monday-Friday 5:45 AM “Insanity” workout class.  I was stoked when I first heard about it, but we hadn’t been able to go yet. Crock Pot Chicken Tacos

I went to Costco today!  Woo hoo.  I love stocking up on healthy, yummy food.   Costco’s produce is second to none.  I love it so much.  I also love love love their tzatziki and hummus.  I put them on everything.  Also, the string cheese is the best deal around.  And oh my gosh, those “Food Should Taste Good” chips are the bomb.  I could do a separate post on those alone….and I might! I Am An Old Lady!

Well, first off I gotta say I feel very OLD this week!  I’ve been going back to the gym a little bit and I’ve loved it!  It’s felt so good mentally to be there, but my body is dying.  I feel like an old lady!
