Quick, Easy, Healthy Egg Drop Soup

Happy Saturday my friends! I hope you are all doing well!

Today I just want to share a very yummy, simple, quick and healthy recipe. It’s for Egg Drop Soup and it seriously takes about five minutes to make. Yay!

This soup is soothing, comforting, very low in calories and is a good source of protein and nutrition.

I wouldn’t make it by itself for dinner because it’s very light, but it’s perfect as a side dish or as a light snack anytime!

My two little boys (ages 10 and 12) love Egg Drop soup from our favorite Chinese Restaurant. They kept asking for it, sooooooo it inspired me to try to make it at home!

I actually enjoy this homemade version even more because I know exactly what’s in it and can use high quality ingredients.

Here are all of the ingredients you need to make this soup….

I gotta say that although I love that Swanson reduced sodium chicken broth, this Bone Broth by Pacific Foods is BOMB! I really love it so much!

In fact I love it so much, I included it in one of my “Favorite Things” posts a while back.

Both of these broths are good options for this soup, but the bone broth offers NINE grams of protein per cup as opposed to the chicken broth that only offers two. Also, the bone broth only has 90 mg of sodium and the chicken broth has 570 mg! Wow.

These are both fine options though! I will say that my boys prefer the chicken broth more. I’m sure it’s because it’s more salty. They don’t love this soup quite as much when I use the bone broth…..but I love it!

Soooooo, just use whatever you prefer!

Also, I use liquid aminos instead of soy sauce. It’s just a bit healthier than soy sauce, but they will both work just fine! If you use soy sauce, I would recommend reduced sodium.

Anyway, here is the recipe!

Quick, Easy, Healthy Egg Drop Soup

Ingredients:

  • 4 cups reduced sodium chicken broth
  • 1 teaspoon reduced sodium soy sauce (I use liquid aminos)
  • 1 teaspoon sesame oil
  • frozen peas and/or carrots (as many as you prefer)
  • 1 Tablespoon + 1 teaspoon cornstarch
  • 3 Tablespoons water
  • 4 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Directions:

In a medium pot on the stove, mix together chicken broth, soy sauce and sesame oil. Bring to a boil.

Add frozen peas and/or carrots (as many as you would prefer!)

In small bowl, mix cornstarch and water.
In another bowl, beat four eggs well.

Add the cornstarch mixture to the soup.
Add the eggs to the soup and stir in gently.

Add the salt and pepper and enjoy! So good!

That’s it. Easy peasy.

Ingredients

  • 4 cups chicken broth reduced sodium

  • 1 teaspoon sesame oil
