Quick, Easy, Healthy Egg Drop Soup

This soup is the perfect comfort food, a good source of nutrition, low in calories and super quick and easy to make!

Ingredients
  

  • 4 cups chicken broth reduced sodium
  • 1 teaspoon soy sauce reduced sodium (or sub liquid aminos)
  • 1 teaspoon sesame oil
  • Frozen peas and/or carrots (as many as you prefer!)
  • 1 Tablespoon + 1 teaspoon cornstarch
  • 3 Tablespoons water
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Method
 

  1. In a medium pot on the stove, mix together chicken broth, soy sauce and sesame oil.
  2. Bring to a boil.
  3. Add frozen peas and/or carrots (as many as you would prefer!)
  4. In small bowl, mix cornstarch and water.
  5. In another bowl, beat four eggs well.
  6. Add the cornstarch mixture to the soup.
  7. Add the eggs to the soup and stir in gently.
  8. Add the salt and pepper and enjoy! So good!
