Last night, Kev and I had a lot of fun attending the VIP event at the new Cafe Zupas in South Jordan, Utah.
I’ve talked about Cafe Zupas a lot on this blog because I love it so much! They have so many healthy options and everything I’ve ever tried there, I LOVE!
I usually order the Mangoberry salad, but last night I decided to try something new. I ordered the Summer Chicken Salad (Chicken, Fresh Strawberries, Cashews, Dried Cranberries, Grapes, Mixed Greens, & House-Made Fresh Strawberry Vinaigrette Dressing) with a small bowl of Tuscan White Bean and Vegetable Soup.
I loved both of them SO much! They may be my new favorite things.
Because it was a VIP event, they also gave us dessert…so we couldn’t pass it up! We chose a Caramel Rockslide Brownie and a Million Dollar Bar and brought them home to the kids. I didn’t take an “official picture” of them, dang it, but you can see them in the picture above (in the little red bags.)
They looked fabulous.
Kev ordered the Chicken Chop Salad with a bowl of Wisconsin Cauliflower soup (his fav!)
We had a wonderful night!
Oh, and the Cafe Zupas at The District is officially opening tomorrow! They are also going to be having a fun “Grand Opening” event on December 5th-7th. They will be serving free desserts with every meal and on Saturday (Dec. 7th), they will be having fun $25 gift card drawings every 15 minutes.

Well, I have been craving soup all day long since I had the wonderful soup at Zupas last night. I’ve decided I’m going to make a yummy soup for dinner tonight.
A friend of mine gave me a recipe for White Chicken Chili several years ago. I love this recipe because it’s simple, tasty and yummy! I’ve changed the recipe a bit over the years, so here’s how I make it…
Easy White Chicken Chili
Ingredients:
- 1 pound chicken (~2 1/2 cups shredded chicken)
- 5 cups water
- 3 teaspoons cumin
- 1 1/2 teaspoons lemon pepper
- 1/2 cup onion; chopped
- 2 cloves garlic; minced
- 1 Tablespoon Olive Oil
- 1 (~15 ounce) can shoepeg white corn
- 1 (~4 ounce) can green chilies; diced
- 3 Tablespoons lime juice
- 2 (~15 ounce) cans Great Northern white beans; drained and rinsed
Optional toppings: Tortilla chips, shredded cheese, sour cream, avocado
Note: You can also use leftover cooked chicken in this recipe. If you use cooked chicken, sub chicken broth for the water.
Directions:
- Boil chicken in water with cumin and lemon pepper. Boil 30 minutes.
- Remove chicken from pot and cut into small chunks. Note: I used my food processor to simplify the process.
- Return chicken to broth water.
- Saute onions and garlic in olive oil.
- Add sauteed onions and garlic to the chicken/broth mixture.
- Add corn, chilies and lime juice to the pot and simmer 5 minutes.
- Add white beans and simmer 15-20 more minutes.
Top with desired toppings and enjoy!
This is such a wonderful, comfort food meal. The leftovers also freeze very well. I just pour them into individual sized containers and put them in the freezer. Easy peasy.
