Quick, Easy, Healthy Egg Drop Soup

This soup is the perfect comfort food, a good source of nutrition, low in calories and super quick and easy to make!

Ingredients
  

  • 4 cups chicken broth reduced sodium
  • 1 teaspoon soy sauce reduced sodium (or sub liquid aminos)
  • 1 teaspoon sesame oil
  • Frozen peas and/or carrots (as many as you prefer!)
  • 1 Tablespoon + 1 teaspoon cornstarch
  • 3 Tablespoons water
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Instructions
 

  • In a medium pot on the stove, mix together chicken broth, soy sauce and sesame oil.
  • Bring to a boil.
  • Add frozen peas and/or carrots (as many as you would prefer!)
  • In small bowl, mix cornstarch and water.
  • In another bowl, beat four eggs well.
  • Add the cornstarch mixture to the soup.
  • Add the eggs to the soup and stir in gently.
  • Add the salt and pepper and enjoy! So good!
